Here is my favorite summertime drink. Most probably this is a combination of something old, something new, something borrowed and something — well, not blue but pale yellow. All told, it’s simple and wonderfully refreshing in a hot summer day — or night. The weather has been pretty warm for a couple of weeks, so I have had a good reason to gulp down these and fine-tune and test the recipe.

Grain-Free Crackers with Olive Oil | Low-Carb, So Simple!

When making experiments with my 1-2-3 Bread I once brushed the loaf generously with extra virgin olive oil, and sprinkled with unrefined sea salt. The crust was crunchy and deliciously salty. That gave me an idea to try out crackers with the same method — almond flour and eggs, brushed with extra virgin olive oil and sprinkled salt on top.

After few attempts I found the best ratio between almond flour and eggs. Then adding olive oil and salt wasn’t much of rocket science. The result: simple but delicious, very very addictive crackers. Easy to modify as well, of course.

Creamy Orange Ginger Chicken

My husband likes chicken. One of his favorite dishes is chicken curry with vegetables. I’ve made it so many times that this time I wanted to try something different. Something juicy with a subtle bite. When thinking of juicy, orange with its gentle fruitiness goes perfectly with chicken. A piquant touch of ginger gives the bite. I wanted to tie the flavors with something creamy, and sour cream seemed to work well giving its freshly sour note. My husband loved the dish and encouraged me to publish the recipe. 1-2-3 Bread

I don’t remember how many experiments were needed that I was satisfied with this recipe. I just can say many, and maybe some more. All I wanted was a really simple recipe for easy gluten-free low-carb bread made from ingredients you can find from almost every grocery store, or at least every health food store. A bread, which is easy to vary and makes a nice base for sweet and savory toppings alike.

Finding the best ratio between these simplest ingredients took looong time. Luckily my toddler and my husband loved most of the results, so did my parents whenever they happened to visit us and I was in the mood for baking (well, I’m always in the mood for baking…) I bet you’ll like this simpler than simple recipe, so enjoy!

I had never made lemon curd before since I’m not that big fan of lemon flavor. The idea of simple low-carb lemon curd was however so tempting, that I wanted to try and develop it. You need only four ingredients to make this simple, delicious, gluten-free low-carb bread which is high in protein. What is really nice that you can cut as thin slices as you want since this bread holds well together. Quite often gluten-free bread tends to be crumbly and break easily because it’s the gluten which holds the bread together and it’s hard to find a proper substitute for that.

This bread is dense not only what comes to the texture, but it’s also dense in nutrients. Even it’s dense, it’s not dry and crumbly but deliciously moist.
