This Ketovore Pumpkin Spice Oven Pancake is soft, fluffy, and pleasantly rich, with warm autumn spices in every bite. It is baked on a sheet pan, cut into generous slices, and served with plenty of butter or whipped cream. In other words, it is Finnish pannukakku dressed for autumn, but without the flour, milk, or sugar of the traditional version.

The recipe combines ideas from my Carnivore Finnish Oven Pancake and Carnivore Cake Roll. Whipped egg whites make the pancake light and airy, while cream cheese and egg yolks give it richness. A little gelatin helps the pancake hold together and keeps the texture pleasantly sturdy rather than fragile.

And then there is the pumpkin pie spice, my all-time favorite seasoning. Pumpkin pie spice is not really a thing here in Finland, but I fell in love with it as soon as I was introduced to it over a decade ago — and I even have my own recipe here. Since then, I have used it whenever I have had even the slightest excuse. I love it so much that I created my own organic blend, which I sell in my Finnish clean keto online store, Ellin keittiö.

This pancake is one more excellent excuse to use it. The spice turns a simple egg and cream cheese batter into a cozy autumn treat, while powdered erythritol adds just enough sweetness. Serve the pancake warm, add an ample amount of butter or whipped cream, and enjoy.

If someone had told me a few years ago that I’d be pouring melted cocoa butter over ice cream and calling it “magic,” I probably would have raised an eyebrow. Turns out, that eyebrow should have stayed down, because this stuff is genuinely delicious.

The idea started with a craving for something bright, summery, and keto-friendly to go on top of my homemade carnivore ice cream. Sugar-free white chocolate and lemon kept popping into my head — a match made in dessert heaven, if you ask me.

But here’s the thing about keto white chocolate: it’s a bit of a unicorn. Good luck finding it in stores, and even if you do, one glance at the ingredient list usually sends you running (mystery fillers, questionable sweeteners, you name it). On top of that, most white chocolate is loaded with milk solids, which means the carb count creeps up faster than you’d like. Not exactly ideal.

So I thought — why not build my own? Cocoa butter is basically the soul of white chocolate anyway, and once you skip the milk and add a splash of lemon, you’re in completely new territory. A few kitchen experiments later, this Keto Lemonade Magic Shell was born: dairy-free, low-carb, and just as tangy-sweet as a cold glass of lemonade on a warm afternoon.

It pours like a dream, hardens in seconds, and cracks open with that fun little snap that makes any dessert feel a bit fancier. Four ingredients, one bowl, one microwave — and suddenly your plain scoop of ice cream is dressed up like it’s going somewhere special — to your mouth, that is.

There is a very specific rabbit hole on YouTube, and its name is The Icing Artist. If you haven’t discovered Laurie’s channel yet, consider this both a warning and a recommendation. She reviews and tastes the most ridiculously fancy cakes and desserts you can imagine, and I’ve been watching her videos far more than a grown woman should probably admit.

After enough of those videos, something predictable happened: I started fancying cake.

Here’s the small problem. I mostly follow a carnivore lifestyle, which means no flours in my kitchen. And before anyone asks, no, I don’t sneak in keto flours or fibers either. Not almond, not coconut, not psyllium, not a single one. I like my baking clean and simple, as plant-free as possible.

But I do keep dark chocolate and cocoa powder in the pantry for the occasional treat (and to avoid oxalate dumping; I’ve got my share of kidney stone attacks leading to sepsis), and that was enough of a loophole for me. I already have a beloved purely Carnivore Cake Roll for when the mood strikes, but this time, plain wasn’t going to cut it. I wanted chocolate. I wanted fluffy — without flour, if that was even possible. And I wanted an unreasonable amount of buttercream frosting doing its job between the layers.

So, I rolled up my sleeves, and this Fluffy Flourless Keto Chocolate Sheet Cake happened.

Originally, I grabbed my Carnivore Cake Roll recipe and was already mentally adding the grated chocolate and cocoa powder to it, thrilled with my little plan. But then I counted the ingredients and realized I would blow past my 5-ingredient limit for this blog. So, I started pondering which ingredient I could get away with skipping without ruining the texture. After some back-and-forth with myself, I decided to leave out the cream cheese, and honestly, it turned out to be the best decision. The cake came out fluffy, chocolatey, and delicious, and it held together beautifully. To be fair, I was fully expecting it to fall apart the moment I tried to lift a slice, so it was a very happy surprise.

The beauty of this cake is that it can be whatever you need it to be. My son, who is a young man of simple pleasures, likes his slice with a generous cloud of whipped cream and a handful of strawberries on the side, and honestly, that is a perfect way to enjoy it. But if you want to go the full Icing Artist route (minus the carb coma and irritated gut), you can turn this into a proper layered chocolate cake with a rich, creamy filling that will make you close your eyes on the first bite.

There is no such thing as too many keto mug cake recipes. Especially chocolatey ones. It is basically a universal truth, right up there with “cats will always sit on the one thing you actually need” and “the moment you sit down, someone will need something.”

For a while now, I have been selling grass-fed beef protein powder in my Finnish clean keto online store — unflavored, vanilla, and chocolate — and yet, somehow, I had never actually tried it myself. Classic case of “the shoemaker’s kids go barefoot.” I finally decided it was high time to fix that, so I grabbed the chocolate-flavored version (because obviously) and set out to see what beef protein could really do.

Now, I could have just stirred it into a shake and called it a day. But where’s the fun in that? I love a good kitchen challenge, and lately I have been binge-watching The Icing Artist on YouTube. She works with all the sugary, wheaty, technicolor-chemical stuff I steer far away from, but the woman is an absolute joy to watch, and I keep getting fantastic ideas for cleaner keto and carnivore baking from her videos. So naturally, I started dreaming of a proper cake.

Then real life happened. Orders to pack, virtual shelves to fill, and approximately zero hours to spend babysitting a cake in the oven. So the grand cake idea shrank into a much more reasonable mug cake plan. Small, fast, doable — and still a genuine challenge, because I had no idea whether beef protein even behaves in baking, or if it would stage a dramatic protest the moment it hit heat.

I pondered, I plotted, I mixed, I microwaved. And to my great surprise, my very first attempt was actually pretty good! The flavor was amazing, the texture was on its way to being lovely — but the cake was slightly raw in the middle, and, oh yes, it had erupted like Mount Vesuvius all over the inside of my microwave. Turns out beef protein plus high heat plus a small mug equals chocolate lava disaster.

Luckily, I already knew the fix from my mug meatloaf experiments: lower power, longer time. And that, my friends, is the magic combination. No more overflow, no more raw center — just a perfectly fudgy, rich, chocolatey mug cake that comes together in minutes.

I ate mine with whipped cream. Then I ate another one with the keto buttercream frosting I had whipped up (blame The Icing Artist and her endless parade of buttercream — I already have plenty of keto frosting recipes of my own, so this was inevitable). Both versions were dangerously good. And honestly? I am still a little amazed that a scoop of beef protein powder can turn into something this delicious this fast.

Last week I was in Corfu, living my best carnivore life and eating gloriously well — but that story is already told in last week’s post.

You might remember that the fridge was running a little too cold, and my Greek yogurt froze? And honestly, it was absolutely delicious! Thick, creamy, cold, and refreshing in the Corfu heat — I was completely sold. Right there and then, I knew I had to make a proper Carnivore Frozen Yogurt when I got home. Something a little more sophisticated than just tucking a yogurt tub in the freezer and hoping for the best.

But then I got back to Finland and real life hit me like a freight train. Dozens and dozens of orders waited for packing, and the virtual shelves of my clean keto and carnivore online store needed filling. That’s when the idea of an Instant Carnivore Frozen Yogurt started taking shape. Luckily, I already had a recipe for Instant Carnivore Cheesecake Slush / Ice Cream, so I used it as a base. Since Greek yogurt is runnier than cream cheese, I reduced the heavy cream — and that solution turned out to be perfect.

No freezing, no churning, no waiting — just pure creamy frozen yogurt bliss in under a minute.

And the timing could not be more perfect: Europe is currently absolutely baking. My son is in Vienna right now, where temperatures are pushing close to 40°C (104°F) — which is the kind of heat that makes you want to live inside a freezer. Cookie dough is one of those things that people pretend they don’t eat raw, but absolutely do. Don’t lie. We’ve all been there, spoon in hand, standing over the mixing bowl with zero shame and zero regret. It’s basically a universal human experience, right up there with eating ice cream straight from the freezer at midnight.

The problem is that traditional cookie dough is basically the unholy trinity — sugar, wheat flour, and some plant-based fat that has no business being in food — held together by misguided optimism. Not exactly carnivore-friendly. Not exactly human-friendly either, if we’re being completely honest about what margarine or plant oil actually is.

Now, if you’ve been searching for carnivore cookie dough recipes online, you’ve probably noticed something suspicious: most of them contain sweeteners, vanilla extract, and other plant-based ingredients that have quietly gate-crashed the carnivore party. They’re wearing a carnivore costume, but they’re not fooling anyone. These Carnivore Cookie Dough Balls, however, are the real deal — 100% animal-based, zero plant ingredients, no exceptions, no compromises, no sneaky vanilla extract hiding in the back.

Carnivore Crepes

Last week, Carnivore Skillet Pasta happened. And while the skillet was still warm, inspiration struck — not from some dramatic kitchen epiphany, but from my own daily social media routine. I post recipes from my 14-year blog archive every single day, and when my Gluten-Free Low-Carb Crepes came up in the rotation, the idea arrived instantly and quietly:

Carnivore Crepes. Obviously.

Fiber and I have never been friends — a long and well-documented relationship breakdown — and the carnivore lifestyle has been my answer. So, when crepes appeared on my screen, the carnivore version of them felt less like a creative leap and more like a logical next step.

Here’s where I have to be honest with you, though.

My recent recipes — including the Carnivore Skillet Pasta — haven’t really required experimenting in the traditional sense. Careful planning, yes. Deep ingredient thinking, absolutely. But actual kitchen chaos? Not really. This recipe was a completely different story.

This one fought back.

Eggy disasters. Pudding-like catastrophes that dissolved at the mere suggestion of a spatula. Crepes so fragile they broke when I looked at them — and I have a very gentle gaze. I changed direction more times than I care to admit, questioned my own food science logic repeatedly, and had several frank conversations with my skillet (and AI) about expectations.

But I kept going. Because patience and perseverance are basically carnivore virtues at this point.

And it paid off.

The final recipe is everything the failed experiments were not — sturdy, flexible, rollable, and beautifully neutral in flavor. You can fill these with savory fillings or sweet ones without the crepe fighting back or falling apart. Two ingredients. A blender. A skillet. Done.

Speaking of sweet fillings — today is Mother’s Day, and these are officially on the breakfast table. My family is getting theirs with fresh strawberries, whipped cream, and my Sugar-Free Hot Fudge Sauce. I, being a committed carnivore, will be enjoying mine exclusively with whipped cream — because anything plant-based, with the noble exception of coffee, is simply not part of my world right now.

Happy Easter! What better way to celebrate the first Easter day than with a paskha that is so light, so airy, and so melt-in-the-mouth that you’ll be scraping the plate clean before you even realize what happened.

Paskha has been part of my Easter tradition for a long time. Thirteen years ago, I developed my Simplified Russian-Style Keto Paskha for this blog, and it has been a reader favorite ever since. Over the years, I’ve played around with different paskha recipes across my blogs — different textures, different flavors, different techniques. So developing a carnivore version was honestly not a big deal. I just dropped the lemon juice, sweeteners, and flavorings, and that was that. A carnivore paskha. Done. If those ingredients suit your lifestyle, by all means keep them in — and I’ve got plenty of variation tips at the end of the post as usual. But the base carnivore recipe, as always on this blog, is 100% animal-based.

Now, the traditional paskha is cooked on the stove, and the result is rich and dense — delicious, but heavy. A few years ago, I fell completely in love with a different approach, which I first tried on my Finnish blog: you simply beat everything until fluffy and airy, no cooking involved whatsoever. The difference is remarkable. This paskha has an almost mousse-like texture — incredibly rich from all the butter, egg yolks, and quark, yet somehow light as a feather because of all the air beaten into it. It just melts in your mouth. Which is exactly why I put it in the title.

Carnivore Finnish Oven Pancake (Pannukakku)

When I was developing my Carnivore Cake Roll, I looked at that beautiful, fluffy batter and thought — hang on. With a few more eggs and without all the rolling and filling drama, this could be a pannukakku. And not just any pannukakku. A carnivore pannukakku. I immediately got to work because when inspiration strikes, you don’t argue with it. You just crack more eggs.

Now, since the Finnish pannukakku is a thick, substantial affair — not some delicate little diva that needs to be handled with care — I knew cream cheese wasn’t going to give me the texture I was after. Mascarpone, on the other hand, was an absolute game-changer. Richer, smoother, and more luxurious than cream cheese, it gave the pancake a melt-in-the-mouth quality that honestly made me a little emotional. I’m not ashamed to admit it. The result is even more melt-in-the-mouth than the traditional version — and the traditional version is already so good that Finns have been fiercely defending its honor for generations.

Speaking of which — let me tell you about the Finnish pannukakku, or “pannari” as we Finns affectionately call it, because if you’ve never had one, you’ve been living a sadly incomplete life and I feel genuinely sorry for you.

Finnish pannukakku is not — I repeat, NOT — the fluffy stack-of-circles pancake you might be picturing right now. It’s a thick, oven-baked pancake that fills the whole pan, and it’s served as a dessert most often with strawberry jam and whipped cream. A traditional Finnish pannukakku is made with wheat flour, eggs, milk, and a little sugar.

It’s one of those foods that every single Finn has strong childhood memories of, the kind that makes you go a little misty-eyed when you think about them. My mom used to make it, and I would eat it with strawberry jam and whipped cream until I physically couldn’t fit any more in. Those were simpler times.

Now my son gets to grow up with his own pannari memories, except his version is considerably healthier than mine was. Homemade sugar-free strawberry jam, whipped cream, and a mom who makes carnivore pancakes from scratch — if that’s not winning at life, I don’t know what is. He’ll thank me later. Or he’ll just ask for seconds, which amounts to the same thing.

Carnivore Cake Roll

Carnivore Cake Roll and One Slice | Low-Carb, So Simple
If you know me even a little, you know I love a good challenge — especially if it involves baking. The problem is, my stomach has its own opinions about what I should be eating, and fiber is firmly on its blacklist. After 20 years of keto and three years of veggie-free carnivore eating, I’ve learned to listen. So here I am, baking away, just without the plants.

Now, if you’ve been hanging around this blog for a while, you also know that my carnivore recipes are the real deal — no protein powders, no problematic milk powders, no flavored this-or-that, no sweeteners, no shortcuts. Just pure animal-based goodness. The way I see it, carnivore baking doesn’t need a chemistry lab. It needs good ingredients and a little creativity. (And okay, maybe a little intelligence, too.)

Cake rolls are my weakness. I’ve made plenty of them, but they all had one thing in common: fiber. This time, I wanted to break that pattern and create a completely fiber-free cake roll. My first idea was to use finely ground pork rinds, that magic carnivore flour that never ceases to amaze me. But then a better idea knocked on my brain cells — what if a cloud bread variation could work as the cake? To keep it sturdy yet fluffy, I added gelatin, another plant-free magic dust I swear by in carnivore baking. For the filling, I kept it simple: just whipped cream. And boy, did it work. (Now, between you and me, I also added a good pinch of my own high quality vanillin stevia, because I sometimes need a little bit of sweetness without the carbs in my life.)
