Savory Carnivore Bacon and Cheese Flan | Low-Carb, So Simple
If you’ve ever looked at a traditional flan and thought, “Lovely, but where’s the bacon?” — congratulations, you are exactly the kind of person this recipe was made for. Flan has always been a bit of a show-off. It wiggles, it gleams, it arrives at the table looking impossibly elegant, and everyone oohs and aahs over it. The only problem is that it’s sweet, and frankly, the carnivore community has been criminally underserved in the wobbly food department. Until now.

This savory bacon and cheese flan is what happens when a classic French custard takes a long, hard look at itself in the mirror and decides to make some — seriously healthy — life changes. Out goes the caramel and vanilla. In comes crispy bacon, sharp aged cheese, and enough heavy cream to make a mainstream cardiologist nervous. The result is a dish that has all the elegance and drama of a proper flan — the silky texture, the satisfying wobble, the theatrical flip onto the plate — but tastes like the best parts of a bacon cheeseburger decided to reinvent themselves as fine dining.

And here is the really good news: this carnivore flan is much easier to make than it looks. You whisk a few things together, pour them into ramekins, let the oven do most of the heavy lifting, and then take all the credit when the beauty slides onto the plate looking like something from a fancy restaurant. Nobody needs to know. That is between you and the oven.

Carnivore Cake Roll

Carnivore Cake Roll and One Slice | Low-Carb, So Simple
If you know me even a little, you know I love a good challenge — especially if it involves baking. The problem is, my stomach has its own opinions about what I should be eating, and fiber is firmly on its blacklist. After 20 years of keto and three years of veggie-free carnivore eating, I’ve learned to listen. So here I am, baking away, just without the plants.

Now, if you’ve been hanging around this blog for a while, you also know that my carnivore recipes are the real deal — no protein powders, no problematic milk powders, no flavored this-or-that, no sweeteners, no shortcuts. Just pure animal-based goodness. The way I see it, carnivore baking doesn’t need a chemistry lab. It needs good ingredients and a little creativity. (And okay, maybe a little intelligence, too.)

Cake rolls are my weakness. I’ve made plenty of them, but they all had one thing in common: fiber. This time, I wanted to break that pattern and create a completely fiber-free cake roll. My first idea was to use finely ground pork rinds, that magic carnivore flour that never ceases to amaze me. But then a better idea knocked on my brain cells — what if a cloud bread variation could work as the cake? To keep it sturdy yet fluffy, I added gelatin, another plant-free magic dust I swear by in carnivore baking. For the filling, I kept it simple: just whipped cream. And boy, did it work. (Now, between you and me, I also added a good pinch of my own high quality vanillin stevia, because I sometimes need a little bit of sweetness without the carbs in my life.)

Let’s jump right into the pizza game. Not the regular pizza game that makes you feel bloated and foggy, like you need a nap on the kitchen floor. That’s not the vibe we are going for.

Today, we are going for a pizza that actually makes you feel good. No plants, no inflammation, no post-meal regret. Just all animal-based ingredients and that satisfying oozy cheese you’ve been missing.

If you’ve already met my Easy Carnivore Pizza Crust, you know it’s a total superstar. Crispy on the outside, tender on the inside, zero-carb, and ridiculously satisfying. Honestly, it deserves its own fan club. Or at least a standing ovation. Or at minimum an affectionate glance while holding a slice.

Sometimes recipe ideas come to me in the strangest ways. I keep a text file full of dishes I want to try, but this one popped into my head while walking past an ad for a brand-new car repair shop. Oddly enough, their grand opening featured hashbrowns—what we Finns call pyttipannu. Of course, the classic version is loaded with potatoes and other carb-heavy fillers, which don’t fit into my carnivore lifestyle at all.

I’ve already played around with a keto-friendly hashbrown recipe using daikon radish, but this time I wanted to go fully animal-based. That’s when it hit me: pork rinds. Crispy, fatty, and completely plant-free, they’re the perfect stand-in for potatoes. In fact, pork rinds are a bit of a carnivore secret weapon—they show up in everything from bread substitutes to crunchy coatings, and now, in this hearty Finnish-style Carnivore Hashbrowns.

And here’s a fun side note: pork rinds also happen to be one of the best-selling products in my Finnish clean keto online store. Ever had one of those days when you just stare into your fridge, thinking, “You know what? There’s simply not enough pork in my life right now.” No? Just me? Well, prepare to remedy that situation with what I can only describe as a meat lover’s fever dream.

This little gem of a recipe literally popped into my head yesterday morning as I was waking up. I wasn’t even planning to post anything this week—I’ve been up to my eyeballs in tallow-rendering and jerky-making, not to mention creating content for my Finnish followers. It’s been chaos!

And let’s be honest, with Google repeatedly slashing my blog traffic, sometimes I wonder why I bother. Can you believe I had more traffic back in 2012 when I first started than I do now? Ridiculous. Google seems to have it out for keto and carnivore blogs—probably because these diets actually work for healing all sorts of health issues. Heaven forbid Big Pharma and Big Food lose a penny to people getting healthier through diet!

First of all, I want to thank Gladys — my dear friend and reader — for this wonderful recipe idea. She sent me an old Hard Boiled Eggs Gratin recipe that was found in a wooden trunk which had been hidden away in the corner of a dusty attic for generations.

I was immediately intrigued with egg gratin; it sounded like a perfect idea and looked gorgeous. Actually, I made several experiments when perfecting the recipe — you can read more about them in this post. This variation is my absolute favorite, though, because it’s so tasty: Sriracha (or homemade Sugar-Free Sweet Chili Sauce) is a great companion for this easy, nearly-zero-carb egg gratin.
