Fiber-Free Ketovore Gingerbread Cookies | Low-Carb, So Simple
It’s been over two years since I last posted a cookie recipe, which is either impressive restraint or a clear sign that something was seriously wrong with my priorities. Either way, the drought ends now. Christmas is three days away, today happens to be the darkest day of the year, and here in Finland, it’s extra dark because there’s no snow to reflect even a hint of light. If there was ever a moment that called for comforting cookies, this is it.

That said, these are not your average “just one more won’t hurt” cookies. I’m carnivore these days, and fiber is public enemy number one — right up there with carbs and seed oils. Still, I’m not above the occasional seasoning or carb-free sweetener, and I wanted a cookie that actually fits that reality instead of pretending almond flour is somehow meat-adjacent. So I went back to my old Vanilla Toffee Butter Cookies and asked a slightly unhinged but important question: what happens if you replace the almond flour with crushed pork rinds?

As it turns out, pork rinds make a surprisingly perfect carnivore flour.

Before anyone starts arguing semantics, a quick clarification: I’m calling this recipe ketovore on purpose. For me, carnivore means 100% animal-based, without a single plant-based ingredient. Since this recipe includes sweetener and seasoning, it doesn’t qualify. That said, it’s far more animal-based than a typical keto cookie, which is why ketovore felt like the most honest label.

The sweetener choice was already settled long ago. Over ten years ago, when I originally developed my Vanilla Toffee Butter Cookies, I learned the hard way that erythritol is the only sweetener that makes almond-flour-based, egg-free cookies hold together properly. That same rule applies here. No fresh drama, no new experiments — just old, hard-earned cookie wisdom put to work in a very different context.

For the first batch, I made both flattened cookies and small dough balls, just to see which one would behave better in the oven. The balls spread into tiny hat-shaped cookies that were undeniably cute, but a bit too brown around the edges and not quite right texture-wise. The flattened ones, on the other hand, were spot on — golden, tender, and dangerously good. So I stopped experimenting, declared victory, and wrote down the final version you see here.

These Fiber-Free Ketovore Gingerbread Cookies are perfect for ketoers, ketovores, and for carnivores who occasionally make room for spices and carb-free sweeteners. Simple Salmon Crudo

You know those weeks when everything seems to demand your attention at once? Well, this was one of those — except instead of looming deadlines (I’m my own boss, after all), it was my car that decided to take a little vacation. So, I ended up walking. A lot. Especially when hauling the orders from my Finnish clean keto online store to the mail points. Let’s just say I got my steps in for the week — and then some!

When thinking about this week’s blog post recipe, the last thing I wanted to do was stand in the kitchen cooking or baking. I wanted something quick, fresh, and effortless — ideally something that didn’t require any heating whatsoever. So, I did what I usually do when I don’t have an immediate idea in mind: I opened my trusty text file that holds my ever-growing recipe idea list. But this time, nothing there felt right. I didn’t want to make a dessert, and everything else seemed too complicated or time-consuming — even though all the recipe ideas were naturally with five ingredients or less.

Then, as if by fate (or clever email marketing), a newsletter from a big Finnish grocery store chain popped into my inbox. Normally, I just skim through those, but this time a recipe caught my eye: Lohicrudo, Salmon Crudo, i.e., quick-marinated salmon. It looked wonderfully simple, and I immediately thought, “Yes, this is exactly what I need right now.”

Of course, I couldn’t resist simplifying it even further — because the original recipe had more than five ingredients and some sugar, too. I stripped it down to the bare essentials to make it fit a ketovore style. The original called for rose pepper, but I’ve never been a fan — it looks pretty but tastes… odd. Instead, I went with white pepper, which pairs beautifully with salmon. It’s aromatic, slightly earthy, and doesn’t overpower the delicate fish like, for example, black pepper does.

I also decided to ditch the unnecessary olive oil. No matter how good the quality, olive oil always feels like you’re consuming engine oil. That’s the benefit of the carnivore diet: your taste buds get refined to the purest, most ancient flavors, and anything too modern just tastes awkward.

And the result of my experiment? A super tender, melt-in-your-mouth Salmon Crudo that’s bright, refreshing, and ridiculously easy to make. No cooking, no fuss — just pure flavor and freshness. The beauty of this dish is that it’s perfect for both busy weekdays and the finest celebrations — and everything in between!

There are days when I genuinely wonder if human evolution has hit “pause” — or worse, “reverse.” You try to share facts, logic, and hard-earned experience, and what do you get in return? Blank stares, confident nonsense dressed up as expertise, and people arguing passionately against basic biochemistry as if it were a matter of opinion. After nearly two decades of trying to explain nutrition in simple, digestible terms, I’ve realized that some people just prefer to stay mentally malnourished.

So, instead of wasting another neuron trying to enlighten the willfully confused, I decided to channel my energy into something far more rewarding: this Pumpkin Spice Egg Soufflé Omelet. It’s warm, fluffy, and — unlike most conversations about nutrition — actually makes sense.

You know my all-time favorite spice is pumpkin pie spice? I’ve been following the carnivore diet for a few years now (with the occasional sweeteners and seasonings sneaking in), and every fall I still crave something cozy and pumpkin-spiced. The problem? My stomach and fiber have never been on friendly terms.

Sure, I already have a hugely popular keto pumpkin pie recipe that I posted back in 2013, but even that one has a touch too much fiber for my rebellious digestive system. So this year, I decided to take things to the next level and make a practically fiber-free pie that still captures all those warm autumnal vibes.

After a bit of pondering, I came up with the idea for this Crustless Ketovore Pumpkin Spice Pie. No pumpkin, no flour, no crust—just heavy cream, eggs, allulose, and my beloved homemade pumpkin pie spice. Simple, silky, and warmly spiced.

Before diving in, I had one of those “what if…” moments: what if I whipped the cream and eggs separately to make the texture extra smooth? So I did—and it worked like magic. The mixture fit exactly into a 9-inch (23 cm) pie pan, baked up beautifully, and smelled like pure autumn comfort.

The hardest part? Waiting until the next day to taste it. But oh, was it worth the wait. Velvety, perfectly seasoned, and kind to my carnivore-leaning tummy, it was pure pleasure in every bite.

Carnivore Lyon-Style Chicken (Poulet au Vinaigre)

I came across the classic French bistro dish Poulet au vinaigre—Lyon-Style Chicken with Vinegar Sauce—while browsing recipes online. The traditional version is rich, tangy, and full of character, usually made with chicken, red wine vinegar, wine, shallots, cream, and sometimes even tomato. So, it’s already fairly keto-friendly.

At first, I imagined a keto-friendly version with a maximum of five ingredients (because that’s what my blog is about): chicken thighs, salt, red wine vinegar, heavy cream, and maybe a little bit of tomato sauce or some shallots. But then I stopped myself. Why not go all the way and create a stripped-down, fiber-free carnivore version? After all, that’s how I usually eat—and I like to keep things as close to the animal kingdom as possible.

So, I dropped the idea of tomato sauce or shallots. What was left was chicken thighs, salt, red wine vinegar, heavy cream, and butter or tallow for cooking the chicken thighs.

Now, vinegar isn’t technically carnivore. True. But I do let a splash sneak into my diet now and then. (If you’ve ever tried my meat discs—my disc-shaped jerky invention that I sell in my Finnish online store—you know vinegar is part of the magic. They’re selling like hotcakes, by the way!)

So, in the spirit of both tradition and taste, I kept the vinegar here as an option. If you’re a strict carnivore, you can swap the vinegar for chicken stock or bone broth.

At first, I thought about making the dish in the oven, baked slowly in a Dutch oven. But honestly, I was busy that day (yesterday, when I developed this recipe) and didn’t feel like firing up the oven just for one recipe. So instead, I grabbed my cast-iron skillet—and I’m glad I did. Cooking it on the stovetop turned out to be the perfect solution, because the sauce reduces beautifully into a thick, creamy concoction that clings to every bite of chicken. And let me tell you, it tastes absolutely heavenly!

I have to confess: I devoured two massive chicken thighs in one go and didn’t need another bite for the rest of the day. That’s how satisfying this dish is.

Well, the original recipe didn’t have white pepper, but I wanted to use white pepper because I had just sourced an excellent organic one that I now sell in my Finnish clean keto online store. I grind it myself with a powerful little grinder, so the flavor is fresh, bright, and worlds apart from the dusty white pepper tins you might remember from your childhood pantry. Plus, white pepper is lower in oxalates than black pepper.
