It’s a well-known fact in Finland that the combination of carrot and gooseberry produce the taste and look of cloudberry — at least they say so. One could have thought that after developing recipes for sugar-free raspberry jam and strawberry jam creating a recipe for blueberry jam would have been easy as pie. But no, that would have been too simple. Achieving the right taste was easy, though, but the perfect texture needed some research and development.
Because a mere jam recipe would have been a bit too plain, I’ve included a recipe for magnificent blueberry jam filled muffins in the end of the post as a bonus recipe. Enjoy!

Luscious Low-Carb Lavender Lemon Bars — that is a lengthy name! I just wanted to choose as describing name for these extra delicious and extra tangy tidbits as I could. Actually, I wanted to include the word ‘little’ there as well, but that would have been an overkill. Moreover, you can cut as big or small bars as you want to. I think I prefer small bars anyway, since these delicacies are heavy stuff what comes to both taste and richness.

There are those rainy summer days when I don’t want to leave the house but get warm and cozy inside. Maybe I heat the oven and bake some of my all-time favorite munchies for comfort. This superb crisp bread is one of my all-time favorite munchies. Crunchy, tasty and crispy, without gluten and as healthful as possible, it might become one of your all-time favorite munchies as well.
Munch this crunchy crisp bread just like that, or with butter and cheese. For real comfort, top it with sugar-free strawberry or raspberry jam. My favorite way to eat this bread, in addition to load a slice with butter and cheese, is to crumble it over my breakfast yogurt — it’s just like granola, but not sweet, though.

Halloumi is Cypriot cheese with salty flavor and semi-hard texture. Because of its high melting point, it’s great for frying and grilling. In this salad flavorful halloumi is combined with sweet strawberries — these two counterpoints make a perfect combination. This mouth-watering combination gets a subtle kick from freshly ground black pepper. Good-quality extra virgin olive oil gives the final touch with its richness and healthful fats.
In case you cannot get halloumi or other cheese suitable for grilling, I’ll give some ideas how to replace it in this salad. I’ll also give vegan and dairy-free alternatives in the end of the post.
