Sugar-Free Sweet Chili Sauce (Vegan)

March 17, 2016 By elviira 32 Comments

Sugar-Free Sweet Chili Sauce

Here comes an easy recipe for a mind-blowingly good sugar-free sweet chili sauce! This quick-to-make hot sauce is actually sour as well, thanks to the super-healthy apple cider vinegar. Delicate sweetness comes from my favorite brown sugar substitute and fresh chili peppers ensure the tongue-tickling (or explosively fiery, your choice!) heat. You can use the sauce immediately after letting it cool down, or let it ferment for two weeks when the flavors get deeper and even better!

Use this delicious condiment with meat and poultry, or try it with rich and creamy veggie dishes. Cauliflower gratin and sugar-free sweet chili sauce, anyone? Believe me, it’s a must-try combination!

Low-Carb Hazelnut Butter Cookies (Egg-Free)

January 22, 2016 By elviira 14 Comments

Low-Carb Hazelnut Butter Cookies

Hazelnuts are wonderfully low in carbs and they taste delicious in various dishes from savory salads to Nutella and other sweet stuff. However, their taste is somewhat powerful and that’s why they need something else to tame down that characteristic flavor. Hazelnut cookies, for example, cry for something milder tasting in addition to hazelnut flour. If you use only hazelnut flour, the cookies taste pretty strong, almost too strong, at least that’s how I find it.

Well, mainstream recipes would naturally use wheat flour in addition to hazelnut flour also for binding, but that’s an inferior option, if you ask me. After so many people ruining their health with excess amount of carbs, starch and grains, I really cannot recommend wheat flour. Luckily almond flour is a perfect option for low-carbers and people who follow ketogenic diet. Almond flour is mild in taste and it accompanies hazelnut flour extremely well. That’s why these delicious Low-Carb Hazelnut Butter Cookies contain both flours in perfect harmony — together with real butter that makes any cookie a mouth-watering delicacy!

Easter Egg Salad

April 2, 2015 By elviira 2 Comments

Image of Easter Egg Salad | Low-Carb, So Simple

Easter is just after a couple of days away from now. Here are two easy recipes for your Easter celebrations. I’m sure you are going to cook — and maybe color and decorate — some eggs, so these recipes are an excellent way to use the leftover eggs.

The Easter Egg Salad is a tasty and colorful variation on regular egg salad. Here sauteed onion gives delicious flavor and curry powder colors the salad with yellow hue, perfect for Easter and springtime. Curry powder is sauteed together with the onion to squeeze out all the color and taste. Be sure to refrigerate the salad overnight so that the flavors mingle. And if you would like to make a dairy-free version, use coconut oil or olive oil for cooking the onion and the curry powder.

The Easter Egg Butter is variation on the Easter Egg Salad — and as colorful and tasty! This recipe doesn’t contain mayonnaise, so if you have problems with raw eggs, you might get enthusiastic with this one!

Gluten-Free Irish Soda Bread

March 16, 2015 By elviira 29 Comments

Gluten-Free Irish Soda Bread | Low-Carb, So Simple

This gluten-free Irish soda bread is a really healthy option for your St. Patrick’s Day celebrations or whenever you happen to need an awesome carrier to butter, jam, cheese, or just enjoy delicious bread on your breakfast table. Instead of using harmful starch for replacing gluten-filled flours, this bread uses coconut flour and psyllium — fantastic and healthy low-carb alternatives to rice flour, tapioca flour and other questionable starches which too often are used for preparing gluten-free bread. Because of psyllium, just remember to drink plenty of water when eating this bread.

Bacon Wrapped Chicken Meatballs (Dairy-Free)

March 6, 2015 By elviira 16 Comments

Image of Bacon Wrapped Chicken Meatballs | Low-Carb, So Simple

These meatballs have been a huge hit on our dinner table for some months now! Not only are they super simple to make, but they are also very tasty. This recipe came together more or less by accident, just using the ingredients I happened to have at hand. (Isn’t that the way how the best recipes are created, anyway?) Moreover, I don’t think you can go wrong with anything that is wrapped in bacon!

The combination of garlic, onion and paprika is quite basic what comes to seasoning, but I just consider those spices really tasty. They go well with mild chicken and savory bacon. Please feel free to use your favorite spices or seasonings, or what you happen to have in your pantry at the moment. Also, if you don’t eat bacon, you can just use turkey bacon or omit the bacon altogether and fry these like regular meatballs.

Basic Butter Frosting and Orange Butter Frosting

February 1, 2015 By elviira 10 Comments

Image of Basic Butter Frosting with Natvia | Low-Carb, So Simple

These fat-filled luscious frostings are perfect for LCHF-style celebrations. These butter frostings are great for piping, making it easy to create gorgeous and delicious decorations on your low-carb cakes and cupcakes. Naturally, you can also use these scrumptious frostings as fillings, like I have done below with my whoopie pies.

You can easily create your own butter frosting variations by adding other flavorings, extracts or even powdered freeze-dried berries. For example, Sugar-Free Strawberry Jam works extremely well and makes a great frosting for example for the Valentine’s Day celebrations.

Moreover, these frostings are ready in a snap. No need to freeze or let them set. Just beat until fluffy and use immediately! You can store the leftover frosting in the fridge, but just remember to take it to room temperature at least half an hour before using.

Unusually Fluffy Muffins (Dairy-Free)

February 1, 2015 By elviira 22 Comments

Unusually Fluffy Muffins With Natvia | Low-Carb, So Simple!

This is one of the recipes I’ve wanted to publish for a very long time since I really haven’t had any dairy-free basic muffin recipe. I just love basic recipes because they leave lots of space for variations. You can let your imagination fly and add vanilla extract or other extracts, berries, nuts, chocolate chips, cocoa powder, berry powders, sugar-free jam or flavorings or anything you happen to have in your pantry at that moment. Moreover, basic muffins are great bases for frostings. Make a gorgeous and luscious frosting and let it shine as a beautiful crown on top of the muffin!
