After nearly two decades of trying to explain nutrition in simple, digestible terms, I’ve realized that some people just prefer to stay mentally malnourished.

You know my all-time favorite spice is pumpkin pie spice? I’ve been following the carnivore diet for a few years now (with the occasional sweeteners and seasonings sneaking in), and every fall I still crave something cozy and pumpkin-spiced. The problem? My stomach and fiber have never been on friendly terms.

Sure, I already have a hugely popular keto pumpkin pie recipe that I posted back in 2013, but even that one has a touch too much fiber for my rebellious digestive system. So this year, I decided to take things to the next level and make a practically fiber-free pie that still captures all those warm autumnal vibes.

After a bit of pondering, I came up with the idea for this Crustless Ketovore Pumpkin Spice Pie. No pumpkin, no flour, no crust—just heavy cream, eggs, allulose, and my beloved homemade pumpkin pie spice. Simple, silky, and warmly spiced.

Before diving in, I had one of those “what if…” moments: what if I whipped the cream and eggs separately to make the texture extra smooth? So I did—and it worked like magic. The mixture fit exactly into a 9-inch (23 cm) pie pan, baked up beautifully, and smelled like pure autumn comfort.

The hardest part? Waiting until the next day to taste it. But oh, was it worth the wait. Velvety, perfectly seasoned, and kind to my carnivore-leaning tummy, it was pure pleasure in every bite.

A while ago, I posted my Carnivore Protein Smoothie recipe, a creamy concoction with egg yolks, cream, and protein powders that quickly became a reader favorite. It proved that smoothies don’t need bananas or berries—or even avocado for keto enthusiasts—to be delicious and nourishing.

I came across the classic French bistro dish Poulet au vinaigre—Lyon-Style Chicken with Vinegar Sauce—while browsing recipes online. The traditional version is rich, tangy, and full of character, usually made with chicken, red wine vinegar, wine, shallots, cream, and sometimes even tomato. So, it’s already fairly keto-friendly.

At first, I imagined a keto-friendly version with a maximum of five ingredients (because that’s what my blog is about): chicken thighs, salt, red wine vinegar, heavy cream, and maybe a little bit of tomato sauce or some shallots. But then I stopped myself. Why not go all the way and create a stripped-down, fiber-free carnivore version? After all, that’s how I usually eat—and I like to keep things as close to the animal kingdom as possible.

So, I dropped the idea of tomato sauce or shallots. What was left was chicken thighs, salt, red wine vinegar, heavy cream, and butter or tallow for cooking the chicken thighs.

Now, vinegar isn’t technically carnivore. True. But I do let a splash sneak into my diet now and then. (If you’ve ever tried my meat discs—my disc-shaped jerky invention that I sell in my Finnish online store—you know vinegar is part of the magic. They’re selling like hotcakes, by the way!)

So, in the spirit of both tradition and taste, I kept the vinegar here as an option. If you’re a strict carnivore, you can swap the vinegar for chicken stock or bone broth.

At first, I thought about making the dish in the oven, baked slowly in a Dutch oven. But honestly, I was busy that day (yesterday, when I developed this recipe) and didn’t feel like firing up the oven just for one recipe. So instead, I grabbed my cast-iron skillet—and I’m glad I did. Cooking it on the stovetop turned out to be the perfect solution, because the sauce reduces beautifully into a thick, creamy concoction that clings to every bite of chicken. And let me tell you, it tastes absolutely heavenly!

I have to confess: I devoured two massive chicken thighs in one go and didn’t need another bite for the rest of the day. That’s how satisfying this dish is.

If there’s one thing the keto world needs more of, it’s stews that don’t taste like punishment. Enter my Keto Chicken and Feta Stew: a bubbling, tangy, salty-creamy dish that requires only five ingredients and exactly zero culinary gymnastics. It’s hearty enough for a ketovore, friendly enough for carnivores who don’t faint at the sight of lemon juice, and guaranteed to make your kitchen smell like you’ve been secretly trained by a Greek γιαγιά (grandmother) with a serious love for feta.

The idea for this dish actually came from the newsletter of a big grocery store chain. Their version was stuffed with pasta and a parade of plant-based extras, but I couldn’t help thinking: strip it down to the essentials, and you’ve got a perfect keto stew. So, I ditched the carbs and kept only the good stuff: chicken, feta, lemon, salt, and pepper—and the result is this gloriously simple, keto-friendly stew.

Well, the original recipe didn’t have white pepper, but I wanted to use white pepper because I had just sourced an excellent organic one that I now sell in my Finnish clean keto online store. I grind it myself with a powerful little grinder, so the flavor is fresh, bright, and worlds apart from the dusty white pepper tins you might remember from your childhood pantry. Plus, white pepper is lower in oxalates than black pepper.

If you grew up in Finland like me, you probably met maksalaatikko—the traditional Finnish liver casserole—long before you were ready for it. This oven-baked classic of liver, rice, onions, raisins, and cream has divided Finns for generations: some call it comfort food, others call it childhood trauma. (Let’s just say it wasn’t the most celebrated item in the school cafeteria lineup.)

I’ve spent years tinkering with liver casseroles—keto versions in my books, low-carb experiments on my old Finnish blog—but now that I’m living the carnivore life, I wanted to see how far I could take it. No rice, no onions, no raisins (seriously, who thought raisins were a good idea with liver?)—just a rich, creamy, five-ingredient casserole made in one bowl that doesn’t need anything plant-based to taste amazing.

The secret binder here isn’t any keto flour or carby grains but finely crushed pork rinds. They’re basically the duct tape of carnivore cooking: they hold things together in carnivore baking, add a crunchy coating when you need it, and somehow manage to replace half the plant ingredients you thought were irreplaceable. In this recipe, they team up with eggs and cream to keep everything perfectly set.

Now, do you have to eat liver or other organs on carnivore? Nope. You’ll get plenty of nutrients without them. In fact, eating too much liver every day for a long time might even cause copper overload. But if you enjoy the flavor and want to sneak in some extra nutrients, this casserole is a delicious way to do it—without any risk of copper toxicity when eaten in moderation.
