Cheesy Turkey and Egg Scramble

November 30, 2025 By elviira 2 Comments

Cheesy Turkey and Egg Scramble | Low-Carb, So Simple
Thanksgiving came and went last Thursday — and you probably still have a stash of leftover turkey sitting in your fridge, quietly judging you every time you open the door. Fear not, because today I’m sharing a ridiculously straightforward and effortless recipe that turns those turkey leftovers into a creamy, cheesy scramble that’s pure keto and carnivore gold.

But here’s the thing: this superb scramble isn’t just for Thanksgiving. It’s perfect any time of year. Simple, quick, and zero fuss, it’s a great way to turn cooked meat into a satisfying keto and carnivore-friendly meal without any complicated prep or extra dishes.

No need to wrestle with tricky recipes or fire up the oven again — just a skillet, some turkey, eggs, cream, and cheese, and you’re good to go. It’s the perfect way to rescue your turkey — or any leftover cooked meat — from the “meh” zone and turn it into something so tasty you might actually look forward to leftovers.

Carnivore Soufflé Egg Muffins

Carnivore Souffle Egg Muffins | Low-Carb, So Simple
When you open your fridge and find yourself face to face with 150 pastured eggs, you know it’s time to get creative. That was my situation recently — cartons upon cartons of eggs staring back at me every time I reached for something. White ones, brown ones, all waiting for their destiny. I had to come up with a way to start using them before they started hatching ideas of their own.

I didn’t want to make a dessert. I’ve posted plenty of those lately, and I was craving something different. But I didn’t want to go the main course route either — nothing heavy or complicated. I wanted something portable, something snackable, something you could just grab and go.

Dairy was out of the question, too. My stomach doesn’t handle cheese at all, and these days I only use cream in my morning coffee. So, no cheesy bakes or creamy casseroles this time. I wanted something light, fluffy, and simple — maybe some kind of egg muffins that would stay airy instead of collapsing into sad little pancakes the moment they cooled.

That’s when I thought of beef collagen powder. I’ve had such good experiences with it lately in keto baking — it’s one of the key ingredients in my Finnish clean keto baking mix, Leivix®, and people absolutely love how it gives structure and bounce to baked goods. After developing close to a hundred recipes for that mix, I’ve learned that collagen can do wonders when it comes to texture.

So, I grabbed a few eggs, added some collagen, and crossed my fingers. The result surprised me completely. These Carnivore Soufflé Egg Muffins turned out beautifully — light, fluffy, and unbelievably stable. They didn’t collapse at all after cooling, which almost never happens with fluffy egg-based recipes. They even reminded me of tuulihatut, those airy Finnish cream puffs — only these are savory, carnivore-friendly, and completely dairy-free.

If you’re looking for something simple, portable, and delightfully fluffy, these little muffins are a must-try — and a perfect way to put a dent in an egg surplus.

Whipped Browned Butter Dip

November 2, 2025 By elviira 1 Comment

Whipped Browned Butter Dip | Low-Carb, So Simple
If you’ve ever browned butter, you already know it’s one of life’s little miracles. That moment when the butter starts to foam, sizzle, and fill the kitchen with that nutty, caramel-like aroma — it’s pure magic. But what if you could take that magic one step further?

Meet Whipped Browned Butter Dip, a soft, airy, and unbelievably rich creation that turns ordinary butter into something truly special. It’s smooth, fluffy, and full of deep, toasted flavor that only browned butter can bring. Think of it as butter’s glow-up moment.

This dip is as simple as it gets: the basic recipe contains just butter — and maybe add a splash of cream if you want it extra light and dreamy. You can keep your dip pure and savory that is perfect for carnivore snacks like pork rinds or Carnivore Crackers, or make it sweet with a hint of vanilla powder and your favorite keto sweetener — considering those belong to your lifestyle. Be sure to check out the Tips for Variations section for further ideas.

This is one of those recipes that looks fancy but takes almost no effort. Just melt, brown, cool, and whip, and suddenly you have a silky, golden dip that’s equally at home next to a steak or spooned over keto pancakes.

So grab that stick of butter and a hand mixer — because once you’ve tried whipped browned butter, plain butter just won’t cut it anymore.

Carnivore Crackers

Carnivore Crackers | Low-Carb, So Simple
If you’ve ever found yourself staring longingly at a bag of chips, whispering, “Just one won’t hurt…” — this recipe is your crispy salvation. These Carnivore Crackers are here to prove that crunch and carbs (or even plants) are not a package deal. With just three ingredients — pork rinds, Parmesan, and a touch of glorious fat — you’ll whip up the most delightfully crunchy, golden-brown bites that even your non-carnivore friends will beg you to share.

They’re salty, cheesy, and satisfyingly crisp — basically everything you’ve ever wanted in a snack, minus the carbs, guilt, and mystery ingredients. The best part? They take less time to make than it takes to explain to someone why you’re baking with pork rinds (again).

Now, let’s get to the fun part: mixing, baking, and enjoying that irresistible crunch!

Carnivore Pork Cordon Bleu

October 19, 2025 By elviira 4 Comments

Carnivore Pork Cordon Bleu | Low-Carb, So Simple
You know that moment when you’re scrolling through fancy restaurant menus, and everything sounds like it was named by someone who swallowed a French dictionary? Well, today we’re taking one of those intimidating classics — Cordon Bleu — and giving it the carnivore treatment it never knew it needed.

I’ve already shared my Chicken Cordon Bleu recipe with you lovely readers, and it’s been a hit. But here’s the thing: while chicken is nice and all, pork is where the real magic happens. Pork neck, to be specific — that beautifully marbled, forgiving cut that practically begs to be stuffed with flavorful cheese and ham.

This Carnivore Pork Cordon Bleu is what happens when you strip away all the unnecessary bells and whistles (goodbye, breadcrumbs that nobody asked for — or almond flour pretending to be something it’s not) and focus on what really matters: quality meats, melted cheese, and the kind of simplicity that makes you wonder why anyone ever thought cooking had to be complicated.

With just five ingredients (if you also count the fat for frying, that is) and a cast-iron skillet, you’ll have a dish that looks like you spent hours in culinary school but actually took less time than waiting for your food delivery app to find a driver. The pork neck does all the heavy lifting, staying juicy and tender while the cheese melts into golden, gooey perfection inside.

It’s fancy enough to impress guests, simple enough for a Tuesday night, and carnivore-friendly enough to keep your metabolism humming along happily. Plus, there’s something deeply satisfying about folding that pork over like a little meaty envelope of deliciousness and watching it transform in the pan.

So grab your meat mallet (or the bottom of a heavy pan — we’re not judgmental here), and let’s turn some humble pork neck into restaurant-worthy elegance. Because sometimes the best recipes are the ones that prove you don’t need a dozen ingredients to create something absolutely spectacular.

Pumpkin Spice Egg Soufflé Omelet

October 12, 2025 By elviira Leave a Comment

Pumpkin Spice Egg Souffle Omelet Served with a Pat of Butter | Low-Carb, So Simple
There are days when I genuinely wonder if human evolution has hit “pause” — or worse, “reverse.” You try to share facts, logic, and hard-earned experience, and what do you get in return? Blank stares, confident nonsense dressed up as expertise, and people arguing passionately against basic biochemistry as if it were a matter of opinion. After nearly two decades of trying to explain nutrition in simple, digestible terms, I’ve realized that some people just prefer to stay mentally malnourished.

So, instead of wasting another neuron trying to enlighten the willfully confused, I decided to channel my energy into something far more rewarding: this Pumpkin Spice Egg Soufflé Omelet. It’s warm, fluffy, and — unlike most conversations about nutrition — actually makes sense.

This recipe is my gentle rebellion against the chaos. While the world insists that sugar is great for weight loss, grains and fiber are “essential,” and processed seed oils are somehow “heart-healthy,” I’ll be over here whisking eggs, melting butter, and enjoying the quiet satisfaction of being right.

Because when logic fails, at least breakfast doesn’t.

Dairy-Free Carnivore Smoothie

September 28, 2025 By elviira 2 Comments

Dairy-Free Carnivore Smoothie | Low-Carb, So Simple
Smoothies are supposed to be fruity, frothy, and full of carbs, right? Well… not on my watch! A while ago, I posted my Carnivore Protein Smoothie recipe, a creamy concoction with egg yolks, cream, and protein powders that quickly became a reader favorite. It proved that smoothies don’t need bananas or berries—or even avocado for keto enthusiasts—to be delicious and nourishing.

I also have my Hearty and Creamy Carnivore Soup recipe, which blends ground beef, bone broth, and cheese into a velvety, comforting soup. That one is rich, cheesy, and cozy—definitely a novel twist on puréed soup.

But in this post, I’m taking things one step further. My new Carnivore Smoothie strips things down to the bare essentials: meat and broth (and an optional egg yolk for added creaminess and nutrients). No cheese, no cream, no dairy of any kind. Just pure carnivore goodness in a frothy, drinkable form. Think of it as the hardcore sibling of my earlier smoothie—less latte, more lion.

Carnivore Liver Casserole

August 31, 2025 By elviira Leave a Comment

Carnivore Liver Casserole | Low-Carb, So Simple
If you grew up in Finland like me, you probably met maksalaatikko—the traditional Finnish liver casserole—long before you were ready for it. This oven-baked classic of liver, rice, onions, raisins, and cream has divided Finns for generations: some call it comfort food, others call it childhood trauma. (Let’s just say it wasn’t the most celebrated item in the school cafeteria lineup.)

I’ve spent years tinkering with liver casseroles—keto versions in my books, low-carb experiments on my old Finnish blog—but now that I’m living the carnivore life, I wanted to see how far I could take it. No rice, no onions, no raisins (seriously, who thought raisins were a good idea with liver?)—just a rich, creamy, five-ingredient casserole made in one bowl that doesn’t need anything plant-based to taste amazing.

The secret binder here isn’t any keto flour or carby grains but finely crushed pork rinds. They’re basically the duct tape of carnivore cooking: they hold things together in carnivore baking, add a crunchy coating when you need it, and somehow manage to replace half the plant ingredients you thought were irreplaceable. In this recipe, they team up with eggs and cream to keep everything perfectly set.

Now, do you have to eat liver or other organs on carnivore? Nope. You’ll get plenty of nutrients without them. In fact, eating too much liver every day for a long time might even cause copper overload. But if you enjoy the flavor and want to sneak in some extra nutrients, this casserole is a delicious way to do it—without any risk of copper toxicity when eaten in moderation.

So, whether you’re a carnivorous Finn missing your childhood casserole or just a curious carnivore looking for a new recipe, this dish is both a nod to tradition and a celebration of simplicity.

Carnivore Hashbrowns (Finnish-Style Pyttipannu)

August 17, 2025 By elviira 2 Comments

A Fork and Carnivore Hashbrowns | Low-Carb, So Simple
Sometimes recipe ideas come to me in the strangest ways. I keep a text file full of dishes I want to try, but this one popped into my head while walking past an ad for a brand-new car repair shop. Oddly enough, their grand opening featured hashbrowns—what we Finns call pyttipannu. Of course, the classic version is loaded with potatoes and other carb-heavy fillers, which don’t fit into my carnivore lifestyle at all.

I’ve already played around with a keto-friendly hashbrown recipe using daikon radish, but this time I wanted to go fully animal-based. That’s when it hit me: pork rinds. Crispy, fatty, and completely plant-free, they’re the perfect stand-in for potatoes. In fact, pork rinds are a bit of a carnivore secret weapon—they show up in everything from bread substitutes to crunchy coatings, and now, in this hearty Finnish-style Carnivore Hashbrowns.

And here’s a fun side note: pork rinds also happen to be one of the best-selling products in my Finnish clean keto online store. I source them straight from a small, family-owned company in Spain, and they’ve become a customer favorite for good reason—they’re versatile, delicious, and made with nothing but pure, clean ingredients.

This recipe is my meat-lover’s twist on a Nordic comfort food classic: simple, filling, and 100% carnivore-approved.

Carnivore Bacon and Egg Pan Pie

August 10, 2025 By elviira 2 Comments

Carnivore Bacon and Egg Pan Pie | Low-Carb, So Simple
This week has been once again one of those weeks where the days blurred together and my to-do list looked more like a novel. Therefore, I needed something quick, easy, and satisfying to share here on my blog—no complicated steps, no fancy ingredients, just pure comfort.

So, I opened my idea list (a humble text file of future recipe dreams) for something quick, easy, and—most importantly—satisfying. And, there it was: Carnivore Bacon and Egg Pan Pie. One pan, minimal effort, maximum reward. Yes, please.

After a quick cupboard excavation to find my oven-safe skillet, I measured, whisked, poured, and into the oven my creation went. Eighteen minutes later, I was staring at gloriously golden, cheesy, and bacony perfection.

Honestly, you simply cannot go wrong with bacon, eggs, cheese, and cream. It’s the holy quartet of comfort food, and this recipe puts them all together in one superb, no-fuss carnivore dish.
