Fiber‑Free Ketovore Gingerbread Cookies

December 21, 2025 By elviira 2 Comments

Fiber-Free Ketovore Gingerbread Cookies | Low-Carb, So Simple
It’s been over two years since I last posted a cookie recipe, which is either impressive restraint or a clear sign that something was seriously wrong with my priorities. Either way, the drought ends now. Christmas is three days away, today happens to be the darkest day of the year, and here in Finland, it’s extra dark because there’s no snow to reflect even a hint of light. If there was ever a moment that called for comforting cookies, this is it.

That said, these are not your average “just one more won’t hurt” cookies. I’m carnivore these days, and fiber is public enemy number one — right up there with carbs and seed oils. Still, I’m not above the occasional seasoning or carb-free sweetener, and I wanted a cookie that actually fits that reality instead of pretending almond flour is somehow meat-adjacent. So I went back to my old Vanilla Toffee Butter Cookies and asked a slightly unhinged but important question: what happens if you replace the almond flour with crushed pork rinds?

As it turns out, pork rinds make a surprisingly perfect carnivore flour.

Before anyone starts arguing semantics, a quick clarification: I’m calling this recipe ketovore on purpose. For me, carnivore means 100% animal-based, without a single plant-based ingredient. Since this recipe includes sweetener and seasoning, it doesn’t qualify. That said, it’s far more animal-based than a typical keto cookie, which is why ketovore felt like the most honest label.

The sweetener choice was already settled long ago. Over ten years ago, when I originally developed my Vanilla Toffee Butter Cookies, I learned the hard way that erythritol is the only sweetener that makes almond-flour-based, egg-free cookies hold together properly. That same rule applies here. No fresh drama, no new experiments — just old, hard-earned cookie wisdom put to work in a very different context.

For the first batch, I made both flattened cookies and small dough balls, just to see which one would behave better in the oven. The balls spread into tiny hat-shaped cookies that were undeniably cute, but a bit too brown around the edges and not quite right texture-wise. The flattened ones, on the other hand, were spot on — golden, tender, and dangerously good. So I stopped experimenting, declared victory, and wrote down the final version you see here.

These Fiber-Free Ketovore Gingerbread Cookies are perfect for ketoers, ketovores, and for carnivores who occasionally make room for spices and carb-free sweeteners. At the end of the post, I’ll also share tips for variations, including a strict 100% animal-based carnivore version for those who want to take things all the way.

Keto Snowflake Truffles

Keto Snowflake Truffles | Low-Carb, So Simple
Hello, my lovely reader! It’s that time of year again — Christmas is sneaking up faster than Santa down a chimney — and if you’re anything like me, you want festive treats without the fuss. Now, I usually stick to a carnivore lifestyle, but this week I decided to shake things up with a keto-friendly holiday delight for all you keto warriors out there. Enter: Keto Snowflake Truffles.

I stumbled upon the original Snowflake Truffle recipe on LorAnn’s page, and immediately thought, “Why not keto-ify this beauty?” Plus, with my obsession for recipes that use 5 ingredients or less, this was a no-brainer.

I took the original recipe, stripped it down, and simplified the method so much that even your holiday-stressed, eggnog-fueled self can whip these up without breaking a sweat. Seriously, why do recipes have to be so damn complicated when you can do it the easy way?

But what I love most about these truffles is that they’re a lifesaver when you’re short on time but still want something festive, creamy, and keto-approved. Bonus: you can make them days ahead, freeze them, and then roll them in coconut right before serving — easy, peasy, zero-stressy.

So, if you’re ready to impress your guests — and more importantly, yourself — with minimal effort and maximum (coconutty) flavor, let’s dive in!

Keto Eggnog Gummies

November 9, 2025 By elviira 3 Comments

Keto Eggnog Gummies Closer | Low-Carb, So Simple
When the air turns chilly and coffee suddenly feels incomplete without a sprinkle of pumpkin pie spice, I know it’s time for eggnog season — or at least the preseason. You know, that magical time when it’s still socially acceptable to pretend you’re “just testing holiday recipes” instead of fully diving headfirst into whipped cream and nutmeg.

Eggnog has always been one of those flavors that makes me instantly nostalgic. It tastes like warmth, comfort, and maybe a little mischief — the kind that comes from adding “just a drop” of rum that somehow turns into a generous splash. But as much as I adore it, traditional eggnog and keto living get along about as well as cats and bubble baths.

Well, I do have a proper keto eggnog recipe in my Low-Sugar, So Simple book, and it’s still one of my favorite holiday treats. But this year, I wanted to take that same cozy flavor and do something a little more… playful.

That’s how these Keto Eggnog Gummies came to life. All the creamy, spiced flavor of eggnog, but in fun, bite-sized form. No sugar, no heaviness, and definitely no guilt — just soft, wobbly bites of pure holiday cheer.

These gummies capture everything I love about eggnog: the silky creaminess, the warmth of nutmeg, and that subtle hint of rum — but without the sugar crash or the post-nog nap. They’re poppable, portable, and somehow manage to taste both nostalgic and new at the same time.

And yes, they’re ridiculously easy to make. Just five ingredients, one saucepan, and a fridge. That’s it. No complicated steps, no gelatin rituals, no waiting for Santa. Just a few minutes of effort for a batch of creamy, festive candies that make November feel instantly cozier.

So if you’re not quite ready for full-blown holiday chaos but still want a little taste of what’s coming, these gummies are your gentle nudge toward the season — smooth, spiced, and just a little bit naughty.

Crustless Ketovore Pumpkin Spice Pie

October 5, 2025 By elviira 2 Comments

A Slice of Crustless Ketovore Pumpkin Spice Pie | Low-Carb, So Simple
You know my all-time favorite spice is pumpkin pie spice? I’ve been following the carnivore diet for a few years now (with the occasional sweeteners and seasonings sneaking in), and every fall I still crave something cozy and pumpkin-spiced. The problem? My stomach and fiber have never been on friendly terms.

Sure, I already have a hugely popular keto pumpkin pie recipe that I posted back in 2013, but even that one has a touch too much fiber for my rebellious digestive system. So this year, I decided to take things to the next level and make a practically fiber-free pie that still captures all those warm autumnal vibes.

After a bit of pondering, I came up with the idea for this Crustless Ketovore Pumpkin Spice Pie. No pumpkin, no flour, no crust—just heavy cream, eggs, allulose, and my beloved homemade pumpkin pie spice. Simple, silky, and warmly spiced.

Before diving in, I had one of those “what if…” moments: what if I whipped the cream and eggs separately to make the texture extra smooth? So I did—and it worked like magic. The mixture fit exactly into a 9-inch (23 cm) pie pan, baked up beautifully, and smelled like pure autumn comfort.

The hardest part? Waiting until the next day to taste it. But oh, was it worth the wait. Velvety, perfectly seasoned, and kind to my carnivore-leaning tummy, it was pure pleasure in every bite.

5-Ingredient No-Bake Ketovore Pumpkin Spice Dough Bites

August 24, 2025 By elviira 2 Comments

Ketovore Pumpkin Spice Dough Bites, One Bite Tasted | Low-Carb, So Simple
If you have followed me for some time, you know that pumpkin pie spice is my all-time favorite spice. The warm blend of cinnamon, nutmeg, ginger, and cloves instantly makes me think of crisp fall mornings, delicious pumpkin-spiced hot drinks, and tasty autumnal treats. Every year, I look for new ways to bring that flavor into my kitchen—and this time, I wanted to do something a little different.

The idea of making pumpkin spice dough popped into my head, but since I follow the carnivore diet (with occasional seasonings and sweeteners), I try to avoid fiber-heavy ingredients. That meant no real pumpkin puree, no nut flours, and no nut butters either—even though I’ve used those plenty of times in my countless pumpkin and fall-themed keto dough recipes across this blog. This time, I wanted something that was truly animal-based, low-fiber, and still indulgent.

So, I decided to try just butter and vanilla-flavored whey protein isolate as the base, plus a pastured egg yolk for fluffiness. Naturally, I included a keto-friendly sweetener (my own blend of powdered erythritol and stevia), and of course, a heaping spoonful of heavenly pumpkin pie spice. To my delight, the experiment turned out absolutely perfect. The texture was buttery yet firm, just like dough, and the flavor was pure fall comfort.

Best of all, this recipe is no-bake, has only five ingredients, and is 100% ketovore-friendly. It’s also perfect for carnivores—if you’re open to using seasonings and sweeteners in your diet. I was so much enjoying the fall flavors—and my tummy too!

Carnivore Cheesecake Slush / Instant Ice Cream

July 27, 2025 By elviira Leave a Comment

Carnivore Cheesecake Slush aka Instant Ice Cream | Low-Carb, So Simple
I’ve been sharing a new recipe on my blog every single week for years, but last week I had to hit pause. Work completely swamped me—those brutal 16-hour days juggling my Finnish business don’t leave much room for anything else. When my Finnish business is thriving, but this blog keeps getting slapped with one arbitrary Google penalty after another for no apparent reason, causing traffic to drop, I have to prioritize where my energy goes. So, while my Finnish clean keto online store flourishes, this blog simply takes a backseat. But now, I’m hoping to get back on schedule with weekly Sunday posts—starting with something cool and refreshing for these hot Finnish summer days.

I almost veered off into baking territory this week, but with the heatwave still going strong, the last thing I wanted was to crank up the oven and melt away. Plus, time’s tight (still those 16-hour work days), so I needed something quick, easy, and refreshingly cool.

A little over a week ago, I launched two new stevia flavors—pineapple and lemon—under my own Finnish brand, Ellin keittiö. I originally created a simple pineapple stevia slush (just ice cubes, heavy cream, and pineapple stevia) for my private community, and it was an instant hit.

Then, earlier today, while taking a long walk in the heat, the idea struck me: why not use that slush as a base for a Carnivore Cheesecake Slush—basically instant carnivore ice cream? Keeping it strictly carnivore meant ditching the sweetener and sticking with ice, cream cheese, and heavy cream.

The first experiment? A hole-in-one with perfect texture and flavor. And between us, since I’m fine with sweeteners on my carnivore diet, I couldn’t resist adding a touch of that pineapple stevia—pure refreshment in a glass. Ready to chill out with me?

Keto Basque Cheesecake

May 18, 2025 By elviira 2 Comments

Keto Basque Cheesecake | Low-Carb, So Simple
Ever witnessed a dessert that looks like a beautiful mistake but tastes like pure heaven? Meet the Keto Basque Cheesecake—the rebellious sibling in the cheesecake family that breaks all the rules yet somehow steals the show.

While traditional cheesecakes demand water baths, gentle cooling, and prayers to the dessert gods to avoid cracks, this caramelized wonder laughs in the face of precision. It’s the dessert equivalent of bedhead that somehow looks better than a salon blowout.

I’ve shared countless keto and carnivore cheesecake recipes over the years, but this Basque beauty stands in a league of its own. Unlike its perfectly manicured cousins, this cheesecake flaunts its imperfections with a confidence we should all aspire to. That deliberately dark, almost burnt exterior isn’t a cooking catastrophe; it’s the signature characteristic that gives this dessert its complex, toasty flavor notes while keeping the inside impossibly creamy.

This indulgent treat delivers all the luxurious richness you crave without the sugar crash afterward. Trust me, this is the cheesecake that’ll have your friends suspiciously eyeing your plate and wondering why they’re torturing their blood vessels with conventional sugar-filled alternatives.

So grab your springform pan and prepare for dessert glory with minimal effort. This ridiculously easy recipe might just become your new dinner party secret weapon. Move over, traditional cheesecake—there’s a new, hotter dessert in town.
