Egg “Porridge”

Egg Porridge with Cinnamon and Raspberries

Here is a fascinating (and satiating!) option for those who are after porridge or oatmeal for breakfast but are lacking proper gluten-free and ketogenic oatmeal recipes. This sweet, creamy and rich breakfast “porridge” keeps you satisfied for hours. (NB. There is a dairy-free version at the end of the post!)

This creation is quite close to scrambled eggs, but grainier, creamier, and sweeter. In fact, when spiced with cinnamon, it resembles rice porridge that we eat here in Finland during Christmas time. It also reminds me of Milchreis (“milk rice”), that Germans eat any time.

If your daily quota of carbs allows, top this porridge with berries or slices of apples or peaches. Berries are highly recommended because of their valuable nutrients.

Toasted Pecan Butter on Pumpkin Muffins | Low-Carb, So Simple!

This Totally Terrific Toasted Pecan Butter is a perfect way to include some healthy fats in your LCHF diet. I created a new approach to prepare toasted pecan butter. Instead of brown sugar the butter is browned to get a delicious, nutty flavor. Pecans are also toasted — but not just boringly in a dry skillet or oven. No, they are toasted together in an ample amount of good old butter. Therefore the pecans will be crispy, buttery and toasted outside, and chewy inside. They’ll get a texture which is totally irresistible!

Combined with some more softened butter, sweetener, vanilla (and other spices, if you like), the result is beyond heavenly. This, you cannot resist!

If you follow a ketogenic diet plan, you probably know that the main source of energy should come from fat. Fat bombs are easy snacks high in healthy fats and very low in carbs and protein. They are great for those who find it difficult to include more healthy fats in their diet.

I’ve made many recipes for fat bombs over the last few months. I love using them as quick snacks on my “active” days when I exercise. Fat bombs are also ideal for the fat fast!

These taste just like strawberry cheesecake ice-cream and have a very creamy texture. If you are dairy intolerant, try coconut milk instead of cream cheese and coconut oil instead of butter. Although I haven’t tried this dairy-free version, I’m sure that creamed coconut milk and coconut oil works equally well.

It’s already late summer, but there is always need for ice cream. This version is a quick fix when the craving strikes, or when you don’t have time to wait for that long-lasting churning of ice cream maker. Especially useful this recipe comes for those who don’t have an ice cream maker. Preparing this frozen treat is fun activity for kids, too!

First, I’ll give a recipe and directions for making vanilla ice cream. Naturally, I won’t leave you with plain vanilla, but I’ll provide some fascinating variations as well! It’s really easy to tweak the recipe and invent new ice cream flavors. After reading this post, you know how to prepare proper sugar-free and low-carb soft ice without an ice cream maker in five minutes or even less. Enjoy!

Home-Made Ranch Seasoning & Dressing

Ranch Dressing | Low-Carb, So Simple!

Soybean and canola oil, phosphoric acid, modified food starch, monosodium glutamate, artificial flavors, disodium phosphate, sorbic acid and calcium disodium edta. Is this what makes an authentic ranch dressing? Nope, not likely, if you ask from me. However, if you ask from the food industry, the answer is unfortunately yes. The ingredients above belong to one of the most popular ranch dressings.

I simply don’t see any reason in this world why anybody should torture herself with that kind of mock food which contains food additives and other suspicious stuff. That’s true especially when it’s so ridiculously simple to make perfectly healthy ranch seasoning mix and dressing very quickly and easily.

There are recipes for home-made ranch seasoning mixes, but most of those use powdered buttermilk. I try to avoid powdered milk and buttermilk, because they tend to contain oxidized cholesterol. I’m not afraid of cholesterol as such, but oxidized cholesterol is completely other thing. As you might know, the “bad” LDL cholesterol in your blood consists of bigger and smaller particles. The bigger particles are in fact good ones, but the small particles are harmful, if they get oxidized. The consequences are all kinds of symptoms and diseases, for example type 2 diabetes. That’s why I prefer my milk and buttermilk fresh, not powdered.
