I’ve done lots of keto mug bread experiments. I posted one recipe, which was pretty close to this one, on Facebook a couple of years ago. But that recipe contained flaxseed, which I don’t use anymore because there are so many problems with it (see below!), so I use chia seeds in this recipe instead. There are those rainy summer days when I don’t want to leave the house but get warm and cozy inside. Maybe I heat the oven and bake some of my all-time favorite munchies for comfort. This superb crisp bread is one of my all-time favorite munchies. Crunchy, tasty and crispy, without gluten and as healthful as possible, it might become one of your all-time favorite munchies as well.

Munch this crunchy crisp bread just like that, or with butter and cheese. For real comfort, top it with sugar-free strawberry or raspberry jam. My favorite way to eat this bread, in addition to load a slice with butter and cheese, is to crumble it over my breakfast yogurt — it’s just like granola, but not sweet, though.

I don’t remember how many experiments were needed that I was satisfied with this recipe. I just can say many, and maybe some more. All I wanted was a really simple recipe for easy gluten-free low-carb bread made from ingredients you can find from almost every grocery store, or at least every health food store. A bread, which is easy to vary and makes a nice base for sweet and savory toppings alike.

Finding the best ratio between these simplest ingredients took looong time. Luckily my toddler and my husband loved most of the results, so did my parents whenever they happened to visit us and I was in the mood for baking (well, I’m always in the mood for baking…) I bet you’ll like this simpler than simple recipe, so enjoy!

Simple and Fluffy Gluten-Free Low-Carb Bread

You need only four ingredients to make this simple, delicious, gluten-free low-carb bread which is high in protein. What is really nice that you can cut as thin slices as you want since this bread holds well together. Quite often gluten-free bread tends to be crumbly and break easily because it’s the gluten which holds the bread together and it’s hard to find a proper substitute for that.

This bread is dense not only what comes to the texture, but it’s also dense in nutrients. Even it’s dense, it’s not dry and crumbly but deliciously moist.
