I just received email from the sweetest lady ever. She has bought my cookbooks and they really seem to have touched her. I want to share these kind words with you, anyway, she is challenging you, my dear readers! Thank you, Marion, from your kind words!

Letter from Marion Rose

“Dear Elviira.

I am writing to thank you from the bottom of my heart for writing such an inspirational cookbook. It has it all, great photography, creative recipes together with easy to understand directions. I need the easy part!

I believe that I am a typical cook….I prepare roughly the same SIX to SEVEN meals over and over again! I bet many people are just like me! I cannot even say I can cook TEN different things. One recipe for pork, steak and burgers, chicken, salmon with a tossed salad on the side. This is very boring and on top of it all on a high fat, low carb diet even more so. Most days I find it difficult to eat enough good and nourishing fats.

On my high fat, low carb way of eating I am very frightened of vegetables.
I never know how to judge the carb count, and I can only eat less than 20 grams of carbs a day. Elviira’s charts inform me with accurate carb and fat grams. This encourages me to eat more than lettuce, for this I thank you, Elviira.

Your book also features many beverages. Seeing I have become somewhat of a purist, I gave up all diet soft drinks more than a year ago. I am trying to be completely chemical and additive free. But I have had a problem and hard time doing this, I used to live on Coke and Pepsi and I hate water. I repeat, I cannot stand water, why people would ever buy it in bottles to drink is beyond my total comprehension. (Nestle is laughing all the way to the bank!) I was never brought up drinking water. Growing up we always drank soft drinks. Even our dog drinks Coke! So giving up pop was very difficult. I love the beverages that Elviira presents. I marveled at the ingenuity she demonstrates, knowing full well I would have never dreamed of any of these myself. Finally, something more to drink than coffee and tea…that I like! Thank you, again!

Elviira your book is going to help me keep my 2015 resolutions…I can see that I will not give up by the middle of February! I marveled at the imaginative ideas it presented, how do you do it? Creative in the kitchen, I am not! I am a truly a boring cook. Elviira has my cure… Recipes that teach me how to eat well. Boredom equals falling off the wagon…I do not want to do that!

Here is my New Year’s resolution, I am writing to you so that it may inspire your readers to take my lead and join me.

It is my goal to prepare at least ONE NEW healthy low carb, high fat recipe to add to my repertoire of seven recipes EVERY WEEK. It is my hope by the end of 2015 I will know over 50 great new recipes I can prepare without thinking. So that I can never say, “I do not know what to make for lunch or dinner. Especially, desserts. After all, why eat food when you can eat dessert! I believe that the more there are delicious desserts to eat, the less you will eat (or crave) all the wrong foods. And never reach for the potato chips at the next family get together.

Well, your new cook book, Elviira, it is going to guide me, inspire me, teach me and keep me from quitting by mid February! I challenge your readers to join me in my culinary quest. Learn with me! For that your readers will NEED this book. Like me dear readers, you know you WANT this cook book. You know you NEED this book. Buy it now before the sale ends.

    Can this crumb also be used on chicken or fish to make goujons?

    Just discovered this site today and can’t wait to try some of the recipes. As a newly-diagnosed Type 2 diabetic, even though I’m a healthy BMI, I’m trying to follow a LCHF diet (although I suspect at the moment I’m too high in protein and too low in fat) to control blood sugars rather than for weightloss. The inspiration here should be most helpful.

      Hi Vanessa, thank you for your comment and welcome to my blog! LCHF indeed is the best way to control diabetes.
      When it comes to the crumb, I think it’s too delicate for deep frying. I would recommend a mixture of almond flour and psyllium where you can add your preferred seasonings. Usually I use a mixture of 1 cup (240 ml) almond flour and 1 teaspoon psyllium husk powder for breading when I make schnitzel or deep fry something. Psyllium makes it hold better together.
