Well, I do have a proper keto eggnog recipe in my Low-Sugar, So Simple book, and it’s still one of my favorite holiday treats. But this year, I wanted to take that same cozy flavor and do something a little more… playful.
That’s how these Keto Eggnog Gummies came to life. All the creamy, spiced flavor of eggnog, but in fun, bite-sized form. No sugar, no heaviness, and definitely no guilt — just soft, wobbly bites of pure holiday cheer.
These gummies capture everything I love about eggnog: the silky creaminess, the warmth of nutmeg, and that subtle hint of rum — but without the sugar crash or the post-nog nap. They’re poppable, portable, and somehow manage to taste both nostalgic and new at the same time.
And yes, they’re ridiculously easy to make. Just five ingredients, one saucepan, and a fridge. That’s it. No complicated steps, no gelatin rituals, no waiting for Santa. Just a few minutes of effort for a batch of creamy, festive candies that make November feel instantly cozier.

How to Make These Keto Eggnog Gummies
Let’s take a look at how to prepare these creamy, festive gummies:
Take a small saucepan and add 1/2 cup (120 ml) of heavy cream…

1/3 cup (80 ml) of powdered erythritol or allulose…

…1 tablespoon of dark rum (or 1 teaspoon rum extract for alcohol-free version)…

…and 1/4 teaspoon of ground nutmeg.

Heat the mixture over high heat while constantly whisking.

Keep whisking until it comes to a full boil. This ensures the sweetener dissolves completely and the flavors blend beautifully.

Once boiling, remove the saucepan from the heat.

Immediately add 3 tablespoons (yes: TABLESPOONS) of gelatin powder while whisking constantly.

Continue whisking until the gelatin is completely dissolved and the mixture is smooth.

Transfer the mixture right away into silicone chocolate molds or a mini muffin pan. If you’re using a muffin pan, fill each well about halfway to three-fourths full.

Refrigerate the molds for about 4 hours, or until the gummies are completely set and firm to the touch.

Once set, remove the gummies from the molds.

Make a pretty presentation and serve — or just pop them into your mouth! Store the leftovers in an airtight container in the fridge for up to three days — though they usually disappear much sooner!
