Last Sunday marked a rare moment on my blog: I didn’t publish a new post. The reason was that I was absolutely swamped with orders for my Ellin keittiö online store. The month had actually started out really lousily sales-wise, so I had turned on Google Ads again after a year of not using them. Then, a perfect storm hit. A Finnish influencer called “Carnivoreäiti” (Carnivore Mom) spontaneously promoted my seasonings on her social media channels, and I want to give a huge shout-out to her for that! At the exact same time, my Google Ads started working like gangbusters and brought numerous sales to my store.
Suddenly, everybody wanted my clean seasonings, especially my American Dip Mix, Sour Cream & Onion Dip Mix, Ranch Seasoning, and Taco Seasoning (you can find the recipes for most of those right here on my blog for your DIY pleasure). Hundreds and hundreds of orders kept pouring in, and I was rushing to mix more seasonings and pack those orders.
Now, if it had just been about packing the orders, that wouldn’t have been a problem. But I do everything from start to finish. I print the labels, cut them, and attach them to the pouches. I mix the seasonings in glass jars and divide them into the pouches. And that is not all: many of the ingredients, like onion powder and cumin, are lumpy, so I have to manually sift them before using them. Oh, and I also have to seal the pouches, plus print, cut, and attach the expiry date stickers. So, as you might expect, the whole process is incredibly time-consuming. I was working at a very fast pace every waking minute last weekend.
I am not complaining, though! I am more than willing to put in all that work to provide my customers with the highest quality products. It took me two full days to get everything done, but I did it, and everyone received their orders.
On top of all that, exactly one week ago on Sunday, I had my birthday, so that kept me busy, too. I didn’t really celebrate it, but I did make this chocolate mousse for my family. I also threw a giveaway on my Finnish social media channels that got hundreds and hundreds of replies, adding even more activity to my already packed schedule.
I am not going to apologize for not posting anything here on my blog last week. I have to prioritize the tasks where my effort actually pays off and is respected. This blog is a nice hobby, but thanks to this clown world and its insanely fabricated algorithms, the traffic just keeps going down and down. I earn mere pennies each month despite pouring 14 years of work into this blog, so I am certainly going to work on the things that bring me the income I deserve.
That said, I still wanted to post a recipe this week, even though I am once again super swamped with work and more orders are rolling in. This recipe is super quick, easy, and simple. You can whip it up any day of the week, or enjoy it as a straightforward meal on the weekend.
How to make this Carnivore Chicken and Blue Cheese Salad
Start by taking a large mixing bowl.

Add 1/3 cup (80 ml) of full-fat sour cream.

Next, take 2 oz (60 g) of crumbled blue cheese and add half of that (about 1 oz or 30 g) to the bowl.

Mix these together until they are well combined. This creates a thick, rich, and tangy dressing for your salad.

Now it is time to add the protein. Toss in 10 oz (280 g) of cooked, chopped, or shredded chicken. I cooked this chicken in the skillet using the leftover fat from the bacon we will add in a moment.

Then, add 4 hard-boiled, peeled, and chopped pastured eggs.

Stir everything together gently…

…until the chicken and eggs are evenly coated with that delicious blue cheese dressing. Taste the mixture and add a pinch of salt if you think it needs it.

Transfer the creamy chicken and egg mixture to a serving bowl.

Finally, top your salad with the remaining blue cheese…

…and 4 slices (or to taste) of cooked and crumbled bacon. The bacon adds the perfect salty crunch!

Serve immediately and enjoy your hearty, animal-based meal.

Yum!

Tips for Variations
This recipe is super versatile. Whether you are strictly animal-based or following a more relaxed keto approach with some low-carb plants, you can easily tweak the ingredients to suit your needs.
Carnivore Variations
Make it dairy-free: If you cannot tolerate dairy, you can easily make this salad dairy-free. Skip the sour cream and blue cheese entirely. Instead, make a quick carnivore dressing by vigorously whisking one or two raw egg yolks with some melted and slightly cooled bacon fat or duck fat until it thickens into a rich mayonnaise. Toss the chicken and chopped eggs in this dressing, and top with extra crispy bacon.
Change the meat: Chicken is a great neutral base, but this recipe works wonderfully with leftover steak cut into bite-sized cubes, shredded roast beef, or even chopped pork belly.
Swap the cheese: If blue cheese is too appalling for your taste, you can replace it with grated sharp cheddar, crumbled feta, or shaved Parmesan — or go mild with mozzarella or Gouda.
Add some crunch: For a crouton-like texture, crush up some pork rinds and sprinkle them on top right before serving.
Keto Variations
Make it a Buffalo Chicken Salad: Stir a tablespoon or two of a clean, sugar-free hot sauce (like Louisiana Hot Sauce) into the sour cream dressing before mixing it with the chicken. The combination of buffalo sauce and blue cheese is a classic!
Add fresh crunch: Toss in some finely diced celery, chopped radishes, or green onions to brighten up the flavors and add some serious texture to the bowl.
Serve it over greens: This creamy chicken mixture is absolutely wonderful scooped over a bed of crisp romaine lettuce or mixed spring greens. You can serve it as an appetizer at your keto party or brunch!
Add some sharp tang: Fold in some chopped dill pickles, capers, or a spoonful of Dijon mustard. The acidity will give the salad a sharp kick that cuts right through the rich sour cream and bacon.
Closing Thoughts
I hope you enjoy this simple, animal-based meal. When you are as busy as I have been lately, having a quick and filling recipe like this is an absolute lifesaver. You get all the flavor and satisfaction of a proper meal without having to spend hours in the kitchen.
As I mentioned, I will be spending most of my time this weekend fulfilling more orders for my Ellin keittiö store. Since I currently only sell and ship my products within Finland, I want to send a huge thank you to all my Finnish customers who placed an order and supported my real work this past week. It means a lot to me, especially when the search engines and social media algorithms are doing their absolute best to hide my content.
For my international readers, especially the majority of you over in the US, do not worry! You can still enjoy my clean seasonings. Remember that you can find the DIY recipes for my dip mixes and seasonings right here on the blog, so you can easily mix them up in your own kitchen.
I will keep focusing on the things that matter and the work that actually pays off. Have a great week, and enjoy the recipe!
