Carnivore Mini Pizzas

February 15, 2026 By elviira Leave a Comment

Carnivore Mini Pizzas | Low-Carb, So Simple
Let’s jump right into the pizza game. Not the regular pizza game that makes you feel bloated and foggy, like you need a nap on the kitchen floor. That’s not the vibe we are going for.

Today, we are going for a pizza that actually makes you feel good. No plants, no inflammation, no post-meal regret. Just all animal-based ingredients and that satisfying oozy cheese you’ve been missing.

If you’ve already met my Easy Carnivore Pizza Crust, you know it’s a total superstar. Crispy on the outside, tender on the inside, zero-carb, and ridiculously satisfying. Honestly, it deserves its own fan club. Or at least a standing ovation. Or at minimum an affectionate glance while holding a slice.

And now, we’re giving that crust the spotlight it truly deserves as we turn it into something even better: Carnivore Mini Pizzas.

Because while a full-size carnivore pizza is a thing of beauty, Carnivore Mini Pizzas are where the fun really begins. They’re cute. They’re portion-perfect. They’re hand-held little discs of meaty, cheesy joy. Well, why not: anything topped with prosciutto and molten buffalo mozzarella is automatically living its best life.

These mini pizzas are simple enough for a busy weeknight, impressive enough for guests, and satisfying enough to silence even the loudest carb cravings. They prove that carnivore eating isn’t restrictive — it’s deliciously creative.

Stick around, because at the end I’m sharing a bunch of carnivore and keto variations so you can mix things up and never get bored.

Keto Butter Baconnaise

February 8, 2026 By elviira Leave a Comment

Keto Butter Baconnaise Close-Up | Low-Carb, So Simple
I’ve shared a lot of keto and carnivore condiment recipes on this blog over the years. Tallow Mayonnaise. Butter Mayonnaise. Even wilder stuff like Fruity Curried Mayo Sauce and Spicy Cajun Avocado Mayo. They’re all yummy, and they all have their place in a keto or carnivore kitchen.

But this Keto Butter Baconnaise? This one’s different.

It started as a simple question: what happens if you use butter and bacon fat as a base for mayo? Turns out, the answer is “magic happens.” Or at least something close enough to magic that you’ll stop caring about the technicalities.

This isn’t just mayo with a smoky edge. It’s rich, velvety, thick, and so flavorful that you’ll start putting it on things you never thought needed condiments. Steak? Sure. Eggs? Obviously. A spoonful at midnight while standing in front of the fridge? I’m not here to judge.

The base recipe fits perfectly into keto and ketovore eating. With a couple of tweaks, it works for a strict carnivore too. And yes, I’m including plenty of variations at the end of the post, because once you make this, you’re going to want options.

If you’ve been craving a condiment that’s actually exciting to eat and elevates everything it touches, this is it. Make it once, and you’ll understand why I’m calling it something special.

The Ultimate Carnivore Ice Cream

February 1, 2026 By elviira Leave a Comment

The Ultimate Carnivore Ice Cream | Low-Carb, So Simple
Back in May 2024, Truly Carnivore Ice Cream proved that you didn’t even need an ice cream maker to make something outrageously good. No churning, no fuss, just cream and egg yolks doing their thing. It was easy, straightforward, and far better than anyone expected from such a minimal setup.

Then, two weeks ago, in January 2026, Carnivore Blue Cheese Ice Cream entered the picture. That recipe was built on a cooked custard base, and while it worked beautifully, it really came into its own when churned. The texture was smoother, lighter, and more refined, and it made one thing painfully clear.

Churning matters.

Once I realized what churning does to a cream-and-egg-yolk custard, there was no unseeing it. So, I took the purity and simplicity of my Truly Carnivore Ice Cream, combined it with the custard technique from the blue cheese version, removed the cheese itself, and churned the result properly.

The outcome is The Ultimate Carnivore Ice Cream. Same uncompromising ingredients, dramatically better texture. If Truly Carnivore Ice Cream made waves back in 2024, this one is here to make the whole carnivore internet lose its balance.

The base recipe is strictly animal-based, without a single plant sneaking in through the back door. That said, if you’re keto rather than hardcore carnivore, don’t worry. I saved the rule-bending for the Tips for Variations section at the end.

Carnivore 3-Cheese Burgers

January 25, 2026 By elviira Leave a Comment

Carnivore Three-Cheese Burgers | Low-Carb, So Simple
Some burgers are nothingburgers. These are the exact opposite.

If a nothingburger is bland, forgettable, and vaguely disappointing, then these Carnivore 3‑Cheese Burgers are loud, rich, and impossible to ignore. They’re incredibly juicy, savory, and so satisfying that seasonings or toppings would just get in the way.

And yes — before you ask — there is blue cheese in this recipe. Again. Now, you might wonder: “Elviira, what is going on with you, yet another recipe with blue cheese after last week’s crazy Carnivore Blue Cheese Ice Cream?” Trust me, the reason is simple: when something works, it really works. Blue cheese brings flavor, umami, and juiciness in a way few other ingredients do — and in burgers, it’s outstanding.

That said, no one is being forced into blue cheese submission. As always, I’ll share plenty of tips for variations, including versions without blue cheese for those who prefer their carnivore adventures a little less, well, moldy.

Carnivore Blue Cheese Ice Cream

January 18, 2026 By elviira Leave a Comment

Carnivore Blue Cheese Ice Cream | Low-Carb, So Simple
Let’s get this out of the way immediately: yes, this is Carnivore Blue Cheese Ice Cream. And no, I haven’t lost my mind. Or maybe I have — but if I did, it was in the best possible way.

This recipe is based on my super popular Truly Carnivore Ice Cream, which apparently taught us all an important lesson: if you give carnivores heavy cream and egg yolks, we will do anything. Including things that sound completely wrong on paper and turn out disturbingly good in real life.

My fascination with blue cheese ice cream actually goes way back. I first encountered it in the 1990s, when I was living in Helsinki. There was this special Italian ice cream parlor I used to pass regularly, and one flavor always stopped me in my tracks: blue cheese ice cream. I don’t even remember if I ever tasted it back then, but I was endlessly intrigued by the idea.

Fast‑forward almost 30 years, and I finally made it myself. And tasted it. And yes, it was absolutely worth the wait. Indulgent, creamy, rich, and pure heaven. Less dessert, more luxury frozen cheese course — and far better than my imagination ever gave it credit for.

Before anyone panics, I’ve included plenty of tips for variations. And yes, some of those variations contain no blue cheese at all, for those of you who love carnivore ice cream but draw the line at frozen moldy dairy. You’re welcome.

So if you’re feeling adventurous — or just curious enough to keep reading — let’s make some carnivore ice cream that will confuse your friends and completely win you over.

Carnivore Yogurt and Butter Sauce

January 11, 2026 By elviira 2 Comments

Carnivore Yogurt and Butter Sauce | Low-Carb, So Simple
I’m almost embarrassed to call this a recipe. It has so few steps and so few ingredients that it feels more like an accident than something I should be publishing on a blog. And yet, here we are. Because this sauce is ingenious. I fell completely in love with its soft, cloud-like texture, and once I started dipping things into it, there was no going back.

I first ate this as a dip with my Meat Discs®, and I knew this one had to be shared. But this isn’t a one-trick pony. It’s a ridiculously versatile condiment that works beautifully with steak, fish, pork, chicken — basically any animal-based main course you can think of. And yes, if you’re one of those people who still lets vegetables onto your plate, this sauce is an excellent match for them, too. I’ll even share plenty of seasoning ideas and variations at the end of the post, including some very non-carnivore yet keto-friendly options.

To be honest, this recipe almost didn’t get published at all. I was fully occupied with the newly released US dietary guidelines — from here in Finland — writing Finnish social media posts and blog articles about them, and once again taking a very detailed (and very critical) look at our own Finnish dietary guidelines. But in the middle of all that, this little sauce kept showing up on my plate… and it felt wrong not to share it.

Once again, this recipe proves that the simplest things really are the best.

Prosciutto Boats with Cream Cheese and Tallow Filling

January 4, 2026 By elviira Leave a Comment

Prosciutto Boats with Cream Cheese and Tallow Filling | Low-Carb, So Simple
Most recipes start with a plan. These prosciutto boats did not.

I was testing a completely different idea when I noticed that two slices of prosciutto, placed just right in a muffin pan, naturally formed a shallow, sturdy shape once baked. Not a cup, not a basket, but an irresistibly cute boat. Crispy, elegant, and surprisingly practical. So, I did what any reasonable person would do: I abandoned the original plan and followed the prosciutto path instead.

Once the boats were done, the question was what to fill them with. I wanted something carnivore-approved, rich, and smooth — a filling that wouldn’t steal attention from the prosciutto but would still feel indulgent. Cream cheese was the obvious base, but instead of reaching for butter, mascarpone, or other stuff, I used tallow. I make my own tallow and sell it in my online store, so it was only natural to see how it would behave in a whipped filling.

And honestly? It worked beautifully! The tallow made the cream cheese lighter, fluffier, and more luxurious than I expected, without overpowering the flavor. The result is a filling that feels rich and satisfying, yet clean and balanced — exactly what these prosciutto boats needed. The smooth and mellow filling complements the crispy and salty prosciutto in a perfect way.

Simple ingredients, minimal effort, and a result that looks far more complicated than it actually is. Below, you’ll find step-by-step instructions with photos, so you can see exactly how these prosciutto boats come together in your own kitchen.

Carnivore Tiramisu

December 28, 2025 By elviira Leave a Comment

Carnivore Tiramisu | Low-Carb, So Simple
New Year’s is just a few days away, and if you’re anything like me, you’re already thinking about what kind of special treat will make it onto the table. I post a new recipe here every Sunday, and for this final stretch of the year, I knew I wanted to share something a little unexpected — something carnivore, but still worthy of a celebration.

That’s when Carnivore Tiramisu popped into my head. And honestly? It makes perfect sense. At its core, tiramisu is really just a rich, airy mousse made from mascarpone and eggs — both proudly animal-based. Yes, traditional tiramisu relies on savoiardi biscuits, but if you’ve been around my blog for a while, you know I already have plenty of carnivore-friendly baked goods that work beautifully in this layered dessert.

Classic tiramisu also includes coffee and marsala wine. While wine didn’t make the cut here, coffee absolutely did. Many carnivores enjoy it, and it adds that unmistakable tiramisu flavor. That said, if you prefer to keep things strictly animal-based, heavy cream works just as well for soaking the base.

I’ve intentionally kept this recipe very simple — no sweeteners, no flavorings, no extras. Think of it as a blank canvas. If you’re curious about ways to tweak it, add sweetness, or play with flavors, don’t miss the Tips for Variations at the end of the post.

Creamy, rich, and quietly impressive, this Carnivore Tiramisu is perfect for ringing in the New Year — and just as fitting for any special occasion you want to celebrate throughout the year.

Fiber‑Free Ketovore Gingerbread Cookies

December 21, 2025 By elviira 2 Comments

Fiber-Free Ketovore Gingerbread Cookies | Low-Carb, So Simple
It’s been over two years since I last posted a cookie recipe, which is either impressive restraint or a clear sign that something was seriously wrong with my priorities. Either way, the drought ends now. Christmas is three days away, today happens to be the darkest day of the year, and here in Finland, it’s extra dark because there’s no snow to reflect even a hint of light. If there was ever a moment that called for comforting cookies, this is it.

That said, these are not your average “just one more won’t hurt” cookies. I’m carnivore these days, and fiber is public enemy number one — right up there with carbs and seed oils. Still, I’m not above the occasional seasoning or carb-free sweetener, and I wanted a cookie that actually fits that reality instead of pretending almond flour is somehow meat-adjacent. So I went back to my old Vanilla Toffee Butter Cookies and asked a slightly unhinged but important question: what happens if you replace the almond flour with crushed pork rinds?

As it turns out, pork rinds make a surprisingly perfect carnivore flour.

Before anyone starts arguing semantics, a quick clarification: I’m calling this recipe ketovore on purpose. For me, carnivore means 100% animal-based, without a single plant-based ingredient. Since this recipe includes sweetener and seasoning, it doesn’t qualify. That said, it’s far more animal-based than a typical keto cookie, which is why ketovore felt like the most honest label.

The sweetener choice was already settled long ago. Over ten years ago, when I originally developed my Vanilla Toffee Butter Cookies, I learned the hard way that erythritol is the only sweetener that makes almond-flour-based, egg-free cookies hold together properly. That same rule applies here. No fresh drama, no new experiments — just old, hard-earned cookie wisdom put to work in a very different context.

For the first batch, I made both flattened cookies and small dough balls, just to see which one would behave better in the oven. The balls spread into tiny hat-shaped cookies that were undeniably cute, but a bit too brown around the edges and not quite right texture-wise. The flattened ones, on the other hand, were spot on — golden, tender, and dangerously good. So I stopped experimenting, declared victory, and wrote down the final version you see here.

These Fiber-Free Ketovore Gingerbread Cookies are perfect for ketoers, ketovores, and for carnivores who occasionally make room for spices and carb-free sweeteners. At the end of the post, I’ll also share tips for variations, including a strict 100% animal-based carnivore version for those who want to take things all the way.

Keto Snowflake Truffles

December 14, 2025 By elviira Leave a Comment

Keto Snowflake Truffles | Low-Carb, So Simple
Hello, my lovely reader! It’s that time of year again — Christmas is sneaking up faster than Santa down a chimney — and if you’re anything like me, you want festive treats without the fuss. Now, I usually stick to a carnivore lifestyle, but this week I decided to shake things up with a keto-friendly holiday delight for all you keto warriors out there. Enter: Keto Snowflake Truffles.

I stumbled upon the original Snowflake Truffle recipe on LorAnn’s page, and immediately thought, “Why not keto-ify this beauty?” Plus, with my obsession for recipes that use 5 ingredients or less, this was a no-brainer.

I took the original recipe, stripped it down, and simplified the method so much that even your holiday-stressed, eggnog-fueled self can whip these up without breaking a sweat. Seriously, why do recipes have to be so damn complicated when you can do it the easy way?

But what I love most about these truffles is that they’re a lifesaver when you’re short on time but still want something festive, creamy, and keto-approved. Bonus: you can make them days ahead, freeze them, and then roll them in coconut right before serving — easy, peasy, zero-stressy.

So, if you’re ready to impress your guests — and more importantly, yourself — with minimal effort and maximum (coconutty) flavor, let’s dive in!
