Mocha Latte
Replace the boiling water with strongly brewed coffee, add a teaspoon of cacao powder, and sweeten with allulose, erythritol, monk fruit, or stevia to taste. Both coffee and cacao bring the caffeine — this one means business.
Clean Keto Variations
Vanilla Latte
Add 1/4 teaspoon of organic vanilla powder and sweeten to taste.

Closing Thoughts
This latte has already proven itself in one of the most demanding field tests imaginable — several hours of forest walking in the Kuopio region.
But let me back up a little. To get to my forest, I first drove 5 hours from home to Kuopio on Friday — stopping in Jyväskylä on the way to stock up my Ellin keittiö products to a large store there. Then, after the forest expedition, I drove 5 hours back home the next day. Ten hours of driving in 24 hours, a store delivery, and several hours of forest walking in between. Just a casual weekend, really.
And throughout all of it — the driving, the delivery, the forest — this latte was there. I carried it in my thermos on the forest walk, where my forestry professional, my mom, and I spent several hours walking through the trees and assessing what needs to be done next — whether that’s logging, planting new seedlings, or other management practices. It’s the kind of work that requires focus, stamina, and a warm, nourishing drink that doesn’t quit on you halfway through a Finnish forest.
This latte did not quit. It stayed warm in the thermos, it kept me going, and it asked for absolutely nothing in return except two eggs, two tablespoons of tallow, and boiling water.
Not bad for a drink that technically shouldn’t exist.
