Smoothies are supposed to be fruity, frothy, and full of carbs, right? Well… not on my watch! A while ago, I posted my Carnivore Protein Smoothie recipe, a creamy concoction with egg yolks, cream, and protein powders that quickly became a reader favorite. It proved that smoothies don’t need bananas or berries—or even avocado for keto enthusiasts—to be delicious and nourishing.

I also have my Hearty and Creamy Carnivore Soup recipe, which blends ground beef, bone broth, and cheese into a velvety, comforting soup. That one is rich, cheesy, and cozy—definitely a novel twist on puréed soup.

But in this post, I’m taking things one step further. My new Carnivore Smoothie strips things down to the bare essentials: meat and broth (and an optional egg yolk for added creaminess and nutrients). No cheese, no cream, no dairy of any kind. Carnivore Lyon-Style Chicken (Poulet au Vinaigre)

I came across the classic French bistro dish Poulet au vinaigre—Lyon-Style Chicken with Vinegar Sauce—while browsing recipes online. The traditional version is rich, tangy, and full of character, usually made with chicken, red wine vinegar, wine, shallots, cream, and sometimes even tomato. So, it’s already fairly keto-friendly.

At first, I imagined a keto-friendly version with a maximum of five ingredients (because that’s what my blog is about): chicken thighs, salt, red wine vinegar, heavy cream, and maybe a little bit of tomato sauce or some shallots. But then I stopped myself. Why not go all the way and create a stripped-down, fiber-free carnivore version? After all, that’s how I usually eat—and I like to keep things as close to the animal kingdom as possible.

So, I dropped the idea of tomato sauce or shallots. What was left was chicken thighs, salt, red wine vinegar, heavy cream, and butter or tallow for cooking the chicken thighs.

Now, vinegar isn’t technically carnivore. True. But I do let a splash sneak into my diet now and then. (If you’ve ever tried my meat discs—my disc-shaped jerky invention that I sell in my Finnish online store—you know vinegar is part of the magic. They’re selling like hotcakes, by the way!)

So, in the spirit of both tradition and taste, I kept the vinegar here as an option. If you’re a strict carnivore, you can swap the vinegar for chicken stock or bone broth.

At first, I thought about making the dish in the oven, baked slowly in a Dutch oven. But honestly, I was busy that day (yesterday, when I developed this recipe) and didn’t feel like firing up the oven just for one recipe. So instead, I grabbed my cast-iron skillet—and I’m glad I did. Cooking it on the stovetop turned out to be the perfect solution, because the sauce reduces beautifully into a thick, creamy concoction that clings to every bite of chicken. And let me tell you, it tastes absolutely heavenly!

I have to confess: I devoured two massive chicken thighs in one go and didn’t need another bite for the rest of the day. That’s how satisfying this dish is.

If there’s one thing the keto world needs more of, it’s stews that don’t taste like punishment. Enter my Keto Chicken and Feta Stew: a bubbling, tangy, salty-creamy dish that requires only five ingredients and exactly zero culinary gymnastics. It’s hearty enough for a ketovore, friendly enough for carnivores who don’t faint at the sight of lemon juice, and guaranteed to make your kitchen smell like you’ve been secretly trained by a Greek γιαγιά (grandmother) with a serious love for feta.

The idea for this dish actually came from the newsletter of a big grocery store chain. Their version was stuffed with pasta and a parade of plant-based extras, but I couldn’t help thinking: strip it down to the essentials, and you’ve got a perfect keto stew. So, I ditched the carbs and kept only the good stuff: chicken, feta, lemon, salt, and pepper—and the result is this gloriously simple, keto-friendly stew.

Well, the original recipe didn’t have white pepper, but I wanted to use white pepper because I had just sourced an excellent organic one that I now sell in my Finnish clean keto online store. I grind it myself with a powerful little grinder, so the flavor is fresh, bright, and worlds apart from the dusty white pepper tins you might remember from your childhood pantry. Plus, white pepper is lower in oxalates than black pepper.

If you grew up in Finland like me, you probably met maksalaatikko—the traditional Finnish liver casserole—long before you were ready for it. This oven-baked classic of liver, rice, onions, raisins, and cream has divided Finns for generations: some call it comfort food, others call it childhood trauma. (Let’s just say it wasn’t the most celebrated item in the school cafeteria lineup.)

I’ve spent years tinkering with liver casseroles—keto versions in my books, low-carb experiments on my old Finnish blog—but now that I’m living the carnivore life, I wanted to see how far I could take it. No rice, no onions, no raisins (seriously, who thought raisins were a good idea with liver?)—just a rich, creamy, five-ingredient casserole made in one bowl that doesn’t need anything plant-based to taste amazing.

The secret binder here isn’t any keto flour or carby grains but finely crushed pork rinds. They’re basically the duct tape of carnivore cooking: they hold things together in carnivore baking, add a crunchy coating when you need it, and somehow manage to replace half the plant ingredients you thought were irreplaceable. If you have followed me for some time, you know that pumpkin pie spice is my all-time favorite spice. The warm blend of cinnamon, nutmeg, ginger, and cloves instantly makes me think of crisp fall mornings, delicious pumpkin-spiced hot drinks, and tasty autumnal treats. Every year, I look for new ways to bring that flavor into my kitchen—and this time, I wanted to do something a little different.

The idea of making pumpkin spice dough popped into my head, but since I follow the carnivore diet (with occasional seasonings and sweeteners), I try to avoid fiber-heavy ingredients. That meant no real pumpkin puree, no nut flours, and no nut butters either—even though I’ve used those plenty of times in my countless pumpkin and fall-themed keto dough recipes across this blog. This time, I wanted something that was truly animal-based, low-fiber, and still indulgent.

So, I decided to try just butter and vanilla-flavored whey protein isolate as the base, plus a pastured egg yolk for fluffiness. Naturally, I included a keto-friendly sweetener (my own blend of powdered erythritol and stevia), and of course, a heaping spoonful of heavenly pumpkin pie spice. To my delight, the experiment turned out absolutely perfect. The texture was buttery yet firm, just like dough, and the flavor was pure fall comfort.

Carnivore Hashbrowns (Finnish-Style Pyttipannu)

Sometimes recipe ideas come to me in the strangest ways. I keep a text file full of dishes I want to try, but this one popped into my head while walking past an ad for a brand-new car repair shop. Oddly enough, their grand opening featured hashbrowns—what we Finns call pyttipannu. Of course, the classic version is loaded with potatoes and other carb-heavy fillers, which don’t fit into my carnivore lifestyle at all.

I’ve already played around with a keto-friendly hashbrown recipe using daikon radish, but this time I wanted to go fully animal-based. That’s when it hit me: pork rinds. Crispy, fatty, and completely plant-free, they’re the perfect stand-in for potatoes. In fact, pork rinds are a bit of a carnivore secret weapon—they show up in everything from bread substitutes to crunchy coatings, and now, in this hearty Finnish-style Carnivore Hashbrowns.

And here’s a fun side note: pork rinds also happen to be one of the best-selling products in my Finnish clean keto online store. This week has been once again one of those weeks where the days blurred together and my to-do list looked more like a novel. Therefore, I needed something quick, easy, and satisfying to share here on my blog—no complicated steps, no fancy ingredients, just pure comfort.

So, I opened my idea list (a humble text file of future recipe dreams) for something quick, easy, and—most importantly—satisfying. And, there it was: Carnivore Bacon and Egg Pan Pie. One pan, minimal effort, maximum reward. Yes, please.

After a quick cupboard excavation to find my oven-safe skillet, I measured, whisked, poured, and into the oven my creation went. Eighteen minutes later, I was staring at gloriously golden, cheesy, and bacony perfection.

Honestly, you simply cannot go wrong with bacon, eggs, cheese, and cream. It’s the holy quartet of comfort food, and this recipe puts them all together in one superb, no-fuss carnivore dish.

Carnivore Fathead Dough

If you’ve been hanging around my blog, you know I’ve dabbled in all sorts of keto fathead dough—from nut-free versions to quick fixes. But lately, since I’m fully embracing the carnivore lifestyle, I felt it was high time to craft a true-blue Carnivore Fathead Dough, aka Carnivore Mozzarella Dough.

My first experiments started back in March 2024 with the usual suspects: shredded mozzarella, cream cheese, and egg. For flour, I tried egg white protein. Spoiler alert: the dough was sticky as a toddler with a candy stash. After adding more egg white protein to tame the mess, I baked pastries that rose like champs but tasted like cardboard. Not exactly a culinary win. Next, I threw in gelatin powder, hoping for a miracle. The dough was easier to handle, but the egg white protein formed nasty lumps—pastries still puffed beautifully, but the taste? Even worse cardboard vibes.

Fast forward a year and a half, and I finally had an epiphany: crushed pork rinds are the ultimate carnivore “flour”. I have sold dozens and dozens of pork rinds in my online store and used almost the same amount myself. I started experimenting with 2 oz (60 g), adding more in tiny increments until, boom, perfection. The dough held together like a dream, making a heavenly pizza crust worthy of the meatiest toppings. With a hot oven still going, I whipped up carnivore pigs in a blanket, too.

Now, I do have separate recipes for Easy Carnivore Pizza Crust and Carnivore Pigs in a Blanket, but honestly, this Carnivore Fathead Dough is so superb that I’m switching gears—it’s my go-to for those recipes and all kinds of carnivore baked goods from now on. Plus, my son’s raving about those pigs in a blanket, so I know this dough will be a repeat star in our kitchen.

Oh, and a quick tip: always make your fathead dough in a saucepan. Microwaves? Nope. You’ll burn your fingers and get a subpar result. Try the saucepan method once, and you’ll never go back.

I’ve been sharing a new recipe on my blog every single week for years, but last week I had to hit pause. Work completely swamped me—those brutal 16-hour days juggling my Finnish business don’t leave much room for anything else. When my Finnish business is thriving, but this blog keeps getting slapped with one arbitrary Google penalty after another for no apparent reason, causing traffic to drop, I have to prioritize where my energy goes. So, while my Finnish clean keto online store flourishes, this blog simply takes a backseat. But now, I’m hoping to get back on schedule with weekly Sunday posts—starting with something cool and refreshing for these hot Finnish summer days.

I almost veered off into baking territory this week, but with the heatwave still going strong, the last thing I wanted was to crank up the oven and melt away. Plus, time’s tight (still those 16-hour work days), so I needed something quick, easy, and refreshingly cool.

A little over a week ago, I launched two new stevia flavors—pineapple and lemon—under my own Finnish brand, Ellin keittiö. I originally created a simple pineapple stevia slush (just ice cubes, heavy cream, and pineapple stevia) for my private community, and it was an instant hit.

Then, earlier today, while taking a long walk in the heat, the idea struck me: why not use that slush as a base for a Carnivore Cheesecake Slush—basically instant carnivore ice cream? Keeping it strictly carnivore meant ditching the sweetener and sticking with ice, cream cheese, and heavy cream.

The first experiment? A hole-in-one with perfect texture and flavor. And between us, since I’m fine with sweeteners on my carnivore diet, I couldn’t resist adding a touch of that pineapple stevia—pure refreshment in a glass. Ready to chill out with me?
