Filling:
1/4 cup (60 ml) sugar-free chocolate hazelnut paste
1. Preheat the oven to 350°F (150°C).
2. Combine all dough ingredients in a bowl. Knead by hand into a firm dough.
3. If the dough is too firm, add olive oil one teaspoon at a time until the dough is pliable and doesn’t tear.
4. Roll out the dough between two sheets of parchment paper until 0.2 inch (0.5 cm) thick.
5. Remove the top sheet of parchment paper. Cut out circles with a round 2—3-inch (5—7 cm) cookie cutter (smaller works better).
6. Place the dough circles on a baking sheet lined with parchment paper, leaving about 0.5 inch (1 cm) of space between each.
7. Spoon about a teaspoon of filling into the center of each circle.
8. Fold your hamantaschen as usual.
9. Bake for about 20 minutes, or until the pastries are cooked through.
10. Remove from the oven, let cool, and enjoy.
