This recipe comes from my Finnish keto book, Koko perheen järkevä ruokavalio (A Sensible Diet for the Whole Family), where it goes by the name Kolmen ainesosan nyhtökana-tacopata. That translates roughly to “3-Ingredient Pulled Chicken Taco Stew” — although I added Cheddar to the English title because cheese deserves proper credit for its work.
The recipe really does need only three ingredients: chicken thighs, taco sauce, and Cheddar. Put the chicken and sauce in a saucepan, let them simmer until the chicken surrenders, then stir in the cheese. Congratulations: you have cooked dinner while doing almost nothing.
The result is tender, cheesy, pleasantly spicy, and wonderfully filling. Eat it straight from a bowl, pile it onto your favorite keto accompaniments, or stand by the stove sampling it repeatedly for “quality control.” I recommend a spoon for that last option.
How to Choose the Taco Sauce
Taco sauces sold in the US (and basically all over the world) vary considerably in ingredients, consistency, flavor, and heat level, so check the label carefully. Choose a smooth, pourable sauce with no added sugar and as few additives as possible. Ideally, it should contain tomatoes, chiles, vinegar, salt, and spices rather than starch, flour, corn syrup, or seed oils. And, it should naturally be as low in carbs as possible.
Since the sauce provides almost all the seasoning in this recipe, use one whose flavor you already enjoy. Mild, medium, and hot all work, although the Cheddar mellows the heat a little.
Step-by-Step Instructions on How to Make This 3-Ingredient Keto Taco and Cheddar Pulled Chicken Stew
Here is the original Finnish recipe, Kolmen ainesosan nyhtökana-tacopata. It has now packed its bags and traveled to the English-speaking side of my blog.

And here is the entire cast: chicken thighs, taco sauce, and shredded Cheddar. Three ingredients, all of them useful.

Place 1 1/3 lbs (600 g) of boneless, skinless chicken thighs in a largish saucepan. Mine is 3 qt (3 liters).

Pour in 28 oz (800 g) of sugar-free, additive-free taco sauce…

…and stir until the chicken is thoroughly coated.

Place the saucepan on the stove.

Cover it with a lid and cook over low heat for about 3 hours.

Stir well every 20–30 minutes to prevent anything from sticking to the bottom.

Continue cooking until the chicken is very tender and falls apart easily when prodded with a fork. It has no choice by this point.

Add 7 oz (200 g, about 1 3/4 cups) of shredded Cheddar…

…and stir until the cheese has melted and the chicken has broken into tender shreds. That’s it — dinner is ready!

Serve immediately as is or with your favorite keto-friendly accompaniments.

Tips for Variations
This three-ingredient stew is easy to adapt when you feel like changing things up. Naturally, adding or replacing ingredients may affect the cooking time and turn it into a four-ingredient recipe — but I promise not to call the recipe police.
Make it with pulled pork or beef
Replace the chicken with cubed boneless pork shoulder or beef chuck. Cook until the meat is tender enough to pull apart, adding the Cheddar only at the end. These meats may need a little longer than chicken.
Try turkey thighs
Boneless turkey thighs make a tasty alternative to chicken and stay tender during the long cooking time.
Change the cheese
Replace the Cheddar with Pepper Jack, Monterey Jack, smoked Cheddar, or a Mexican-style cheese blend. You can also combine two cheeses rather than forcing yourself to choose.
Make it extra creamy
Replace half the Cheddar with full-fat cream cheese. Add it at the end and stir until completely melted and incorporated.
Add bacon
Of course, bacon! Who could resist? Fry chopped bacon until crisp, then stir it into the finished stew. Alternatively, sprinkle it over each serving so that it retains its crunch.
Turn it into a chicken-and-chorizo stew
Brown crumbled fresh chorizo, drain any excess grease if necessary, and add it to the saucepan with the chicken and taco sauce.
Use salsa verde
Replace the red taco sauce with a sugar-free salsa verde for a tangier version with plenty of tomatillo flavor. Choose a fairly thick one so the finished stew does not become too watery.
Make it in a slow cooker
Place the chicken thighs and taco sauce in your slow cooker, cover, and cook on LOW for 6–8 hours. When you return in the evening, shred the tender chicken directly in the slow cooker. Stir in the Cheddar, cover, and cook for another 10–15 minutes, or until the cheese has melted. Dinner has been making itself while you were out being productive — or at least convincingly pretending to be.
Closing Thoughts
I made this stew for my son last week because his dinners tend to rotate among the same few favorites. I thought the rotation could use a new member — nothing too revolutionary, just a little variety. Besides, he loves taco sauce, so why not. And even better: he ate this stew three days in a row, so now I got another recipe to the rotation.
Anyway, that gave me the idea to share the recipe here on my blog. The timing was perfect: I had a very busy week and was also feeling a bit under the weather, thanks to the flu bug currently making the rounds here in Finland. Inventing something new and complicated was clearly not going to happen.
Luckily, this simple and satisfying recipe was already waiting in my Finnish book, first published in 2020. Three ingredients and hardly any effort; just what I needed — and I’m sure you will need it, too!
Speaking of eventful weeks, you might remember from my last post that the tire on my old car broke. I got it fixed on Monday so I could keep using the car. Then, on Thursday, I got a new car — well, an older model, but in MUCH better shape than my previous one!

The previous owner had completely packed the new car with winter tires and spare parts, so I decided to take the old car out for one final farewell trip to drop off online store orders at the post office.
Guess what happened? Right as I pulled out of the yard, I heard an alarming rattling sound and felt something dragging underneath the car. I turned right back into the yard, looked under the chassis, and sure enough: the exhaust pipe was dragging on the ground because of a broken exhaust hanger!
My son and I rushed to unload all the tires and parts from the new car, tossed the parcels inside, and I made it to the post office after all. Never a dull moment here!
