I had completely different plans for you this week here on my blog. I had a wild, highly experimental recipe idea lined up, but then I launched a very limited edition of my hand-made seasoning Advent calendar and as you can expect, things got completely hectic (once again!). So, I simply didn’t have the time to give my wild idea the testing it deserved.
I scrolled through my backup list and spotted a solid carnivore dinner recipe. It would have been a nice addition to the dinner rotation, but it wasn’t exactly thrilling. I’ll certainly post it some other time, and I promise to perfect that wild experiment for you soon, too.
But that left me needing a recipe for today. The thought process went something like this: How about a Keto Pumpkin Spice Mousse? No, too lame. I already have enough pumpkin spice on this blog to fill a barn — just look at my massive round-up of 32 pumpkin and pumpkin spice recipes. Okay, how about Keto Chocolate Pumpkin Spice Mousse? Better, but I still wasn’t satisfied.
Then, I remembered that I have a huge 1 kg bag of black cocoa powder sitting in my pantry. With Halloween right around the corner, inspiration finally struck. I ditched the pumpkin spice entirely and decided to create a spooky, gray mousse instead. Black cocoa powder gives such an impressive grayish-black color without any dubious food colorings.
It turned out perfect — both tastewise and lookswise. Black cocoa provides an eerie, spooky color in a completely natural way. If you want some real Halloween ick factor, pipe it into serving bowls with a round piping tip so it looks… well, gross. (Looking at the photos, I seriously wonder if those googly-eyed gray pumpkins were the culprits…)
If you want to impress or scare your guests this year, make this mousse, add some fun props, and wait for the reactions. It’s ready in an instant with zero chilling time required, so you can make it whenever you need a quick dessert.
And don’t worry, if you were actually looking forward to that pumpkin spice version, I haven’t forgotten you. As always, I’ve included plenty of variations at the end of the post!
How to Make This Spooky Keto Chocolate Mousse
This dessert comes together surprisingly fast. Just keep an eye on the chocolate paste so you don’t overwhisk it, and fold the whipped cream in gently to keep the mousse light and airy.
Take a mixing bowl and add 1/4 cup (60 ml; or to taste) of powdered erythritol or allulose…

…3 tablespoons of unsweetened black cocoa powder…

…and a pinch of unrefined sea salt — because all chocolate desserts require a pinch of salt for that decadent note.

Stir until well combined.

Next, you’ll need heavy cream. This recipe calls for 1 1/2 cups (360 ml) of heavy cream altogether. Pour 1/2 cup (120 ml) of the heavy cream into the cocoa mixture.

Whisk…

…until the mixture is just thick. Be careful not to overwhisk, or the paste might become grainy. Set this aside.

Pour the remaining 1 cup (240 ml) of the heavy cream into a separate bowl.

Beat with an electric mixer…

…until stiff peaks form.

Add the whipped cream to the chocolate paste in four parts.

Mix gently with a spatula after each addition…

…until you have an evenly mixed, airy mousse. Try to retain as much fluffiness as you can!

Pipe or spoon the mousse into serving bowls. (Grab that round piping tip if you are going for the gross-out Halloween look!)

Serve immediately, or refrigerate until you are ready to eat.

Yum — seriously, this is scrumptious!

Here’s the recipe for you to enjoy:

Tips for Variations
Black cocoa powder doesn’t just look different; it tastes different, too. It’s heavily alkalized, which gives it a very dark, earthy, and smooth, non-bitter flavor — if you’ve ever eaten the cookie part of an Oreo, you know exactly what black cocoa tastes like. Because of that distinct and mild flavor profile, it’s really fun to play around with different add-ins.
Here are a few ways to mix things up:
The Promised Pumpkin Spice
I couldn’t leave you hanging! To make the Keto Chocolate Pumpkin Spice Mousse I originally planned, simply add 1 teaspoon of Homemade Pumpkin Pie Spice to the dry ingredients in step 1. You can use the black cocoa if you want a dark, spooky spiced mousse, or swap it for regular unsweetened cocoa powder for a more traditional brown color and classic chocolate flavor — and if you don’t want to scare your Halloween guests with gross looks.
Cookies and Cream
Since black cocoa already gives this mousse an Oreo-like flavor, leaning into the cookies and cream vibe makes perfect sense. Gently fold a handful of crumbled keto cookies (vanilla or chocolate) into the mousse right at the end. Save a few crumbs to sprinkle on top of each serving.
Spicy Mexican Chocolate
Mild-flavored black cocoa can handle bold flavors very well. Add 1 teaspoon of ground Ceylon cinnamon and a pinch of chipotle to your dry ingredients. The cinnamon adds warmth, and the chipotle leaves a nice smoky kick at the back of your tongue.
Peppermint Patty
Mint and dark chocolate are a match made in heaven, and black cocoa is absolutely perfect for it. Add 5 drops of LorAnn peppermint oil to the 1/2 cup (120 ml) of cream in step 2 before you whisk it into the chocolate paste.
Midnight Mocha
If you want to deepen the chocolate flavor even more, add 1 teaspoon of instant espresso powder to the sweetener and cocoa powder in the first step. The coffee enhances the deep, rich notes of the black cocoa without turning the taste into pure coffee.
Closing Thoughts
Running my clean keto and carnivore online store takes up practically every minute of my day right now. Please don’t misunderstand me — I absolutely love my work and I have plenty of energy to tackle it, thanks to the healthy diet and lifestyle! It’s simply a matter of time. There are only so many hours in a day, and between packing orders, helping customers, and launching the new seasoning Advent calendar, my schedule is completely full. Knowing that I am sending out genuinely clean, junk-free options to my wonderful customers makes every single busy day totally worth it.
Still, on those non-stop days, I need things to be easy in the kitchen. That’s why a dessert that takes exactly five minutes and zero chilling time is such a lifesaver. I know this weird, gray mousse wasn’t my original plan for the week, but it ended up being exactly the quick win I needed.
I hope you have a lot of fun making this one, especially if you decide to go all-in on the gross Halloween presentation. Let me know how your guests react, and tell me which variation you ended up trying!
