If someone had told me a few years ago that I’d be pouring melted cocoa butter over ice cream and calling it “magic,” I probably would have raised an eyebrow. Turns out, that eyebrow should have stayed down, because this stuff is genuinely delicious.
The idea started with a craving for something bright, summery, and keto-friendly to go on top of my homemade carnivore ice cream. Sugar-free white chocolate and lemon kept popping into my head — a match made in dessert heaven, if you ask me.
But here’s the thing about keto white chocolate: it’s a bit of a unicorn. Good luck finding it in stores, and even if you do, one glance at the ingredient list usually sends you running (mystery fillers, questionable sweeteners, you name it). On top of that, most white chocolate is loaded with milk solids, which means the carb count creeps up faster than you’d like. Not exactly ideal.
So I thought — why not build my own? Cocoa butter is basically the soul of white chocolate anyway, and once you skip the milk and add a splash of lemon, you’re in completely new territory. A few kitchen experiments later, this Keto Lemonade Magic Shell was born: dairy-free, low-carb, and just as tangy-sweet as a cold glass of lemonade on a warm afternoon.
It pours like a dream, hardens in seconds, and cracks open with that fun little snap that makes any dessert feel a bit fancier. Four ingredients, one bowl, one microwave — and suddenly your plain scoop of ice cream is dressed up like it’s going somewhere special — to your mouth, that is.
Step-by-Step Instructions
Grab a microwave-safe bowl and add 4 oz (115 g) of cocoa butter…

…3 oz (85 g) of coconut manna…

…and a few drops of lemon-flavored stevia or monk fruit (add to taste — you can always adjust later).

Place the bowl in your microwave oven.

Cover the bowl.

Heat in 30-second bursts…

…giving everything a good stir after each one.

Keep going until the mixture is completely melted and smooth. Depending on your microwave, this usually takes 2–3 rounds.

Once melted, stir in 10 drops of LorAnn lemon oil. This is where the magic really happens — the aroma alone will have you sneaking a spoonful straight from the bowl.

Let the mixture cool to room temperature. This step is important! If it’s too warm, it will slide right off the ice cream instead of setting into that lovely shell.

Pour the mixture over your favorite ice cream, like keto vanilla ice cream…

…and watch it work its magic — the shell hardens in just seconds, ready for that satisfying crack.

Here’s the recipe for you to enjoy:

Tips for Variations
Lemon is where this recipe started, but it’s definitely not where it has to end. Cocoa butter is surprisingly easygoing, happily taking on whatever flavor you throw at it — so here are a few directions worth exploring.
Swap the citrus
Lemon is just the beginning. Try LorAnn orange oil for a whimsical creamsicle vibe or lime oil for a key lime pie feel. Just keep the amount around 10 drops — LorAnn citrus oils are potent little things.
Bring in the vanilla
Skip the lemon entirely, sweeten with unflavored stevia, and stir in the seeds from half a vanilla bean for a pure, dairy-free “white chocolate” magic shell. Elegant, simple, and perfect over frozen berries.
Make it minty
Use unflavored stevia instead of lemon stevia. Add a few drops of LorAnn peppermint oil for a refreshing after-dinner topping. Especially lovely over chocolate keto ice cream — it’s like a fancy restaurant dessert without the fancy price tag.
Add a little warmth
For a cozier version, skip the lemon oil, use unflavored or pumpkin spice stevia, stir in 1/2 teaspoon of ground Ceylon cinnamon, or a pinch of cardamom or nutmeg. Great in fall, especially over a scoop of keto pumpkin ice cream.
Coffee lovers, this one’s for you
Dissolve 1/2 teaspoon of instant coffee or espresso powder into the melted mixture for a subtle mocha-style shell. Skip the lemon oil and use unflavored sweetener for this one — coffee and lemon are not friends.
Go green with matcha
Whisk in 1–2 teaspoons of high-quality matcha powder for an enchanting twist that pairs beautifully with vanilla or coconut keto ice cream. Bonus: it turns the shell a gorgeous soft green, which looks stunning against a pale scoop of ice cream.
Go bold and skip the sweet
Leave out the sweetener entirely and pour the shell over a scoop of Carnivore Blue Cheese Ice Cream for a wildly sophisticated flavor combo. The tangy lemon plays off the funky blue cheese in the most unexpected way. It sounds a little crazy, but trust me, it works — if you like blue cheese, that is.
Play with texture
Once the shell is poured over your ice cream but still soft, sprinkle on some crushed keto cookies, toasted coconut flakes, chopped nuts, or cacao nibs. They’ll get locked in as the shell hardens, giving you that extra crunch.
Final Thoughts
Who knew a handful of ingredients could add so much cheer to a bowl of ice cream? This little recipe has really become one of my favorite kitchen tricks this week. It’s quick to whip up, endlessly adaptable, and just the right amount of fancy without any of the fuss.
There’s something really satisfying about making your own version of a treat that keto folks usually have to skip. No dubious ingredient lists, no compromises, just pure lemony goodness that also happens to fit your lifestyle.
If you end up making this, I’d genuinely love to hear how it turned out — and if you invent a new flavor twist along the way, even better. Happy scooping!
