I’ve been sharing a new recipe on my blog every single week for years, but last week I had to hit pause. Work completely swamped me—those brutal 16-hour days juggling my Finnish business don’t leave much room for anything else. When my Finnish business is thriving, but this blog keeps getting slapped with one arbitrary Google penalty after another for no apparent reason, causing traffic to drop, I have to prioritize where my energy goes. So, while my Finnish clean keto online store flourishes, this blog simply takes a backseat. But now, I’m hoping to get back on schedule with weekly Sunday posts—starting with something cool and refreshing for these hot Finnish summer days.
I almost veered off into baking territory this week, but with the heatwave still going strong, the last thing I wanted was to crank up the oven and melt away. Plus, time’s tight (still those 16-hour work days), so I needed something quick, easy, and refreshingly cool.
A little over a week ago, I launched two new stevia flavors—pineapple and lemon—under my own Finnish brand, Ellin keittiö. I originally created a simple pineapple stevia slush (just ice cubes, heavy cream, and pineapple stevia) for my private community, and it was an instant hit.
Then, earlier today, while taking a long walk in the heat, the idea struck me: why not use that slush as a base for a Carnivore Cheesecake Slush—basically instant carnivore ice cream? Keeping it strictly carnivore meant ditching the sweetener and sticking with ice, cream cheese, and heavy cream.
The first experiment? A hole-in-one with perfect texture and flavor. And between us, since I’m fine with sweeteners on my carnivore diet, I couldn’t resist adding a touch of that pineapple stevia—pure refreshment in a glass. Ready to chill out with me?

Tips and Variations
This Carnivore Cheesecake Slush is incredibly versatile, and to help you get the best results, I’ve included some essential pro tips along with tasty carnivore and keto-friendly variations. Whether you’re aiming for the perfect texture or want to experiment with flavors, these pointers and ideas will help you customize your instant ice cream just the way you like it.
Pro Tips:
- Use cold cream cheese and heavy cream straight from the fridge. Cold ingredients help maintain the icy texture and prevent premature melting.
- Familiarize yourself with your blender’s settings. Different machines handle ice and creamy mixtures differently. I use the ice cream setting in my Blendtec blender.
- If your blender doesn’t have a dedicated ice cream or slush program, start with a pulse function or medium-high speed to break down the ice evenly without overheating the motor or turning the mixture too liquid.
- If your blender has an ice crush or smoothie program, try using that as a starting point.
- Don’t hesitate to stop blending briefly and shake the jar lightly to ensure everything mixes smoothly.
Variations:
Cream Cheese-Free Version: Skip the cream cheese and use 1/4 cup (60 ml) of heavy cream instead. This variation is very close to the original slush I created for my private community—super simple and just as refreshing, plus it’s still 100% carnivore.
Coffee Twist: I know many carnivores drink coffee—and I’m one of them. To give your slush a delicious caffeinated kick, add 1 teaspoon of instant coffee granules for a subtle mocha flavor, or replace 1 tablespoon of the heavy cream with 1 tablespoon of strong cold coffee.
Sweetener Fun: If you enjoy sweeteners, feel free to experiment with flavored options like flavored stevias or monk fruit drops. And if you happen to be one of my Finnish customers, I highly recommend trying the following Ellin keittiö stevia flavors: pineapple, lemon, strawberry, caramel, vanillin, mango, or lime for an incredibly delicious, natural taste without any carbs.
Extra Creamy: For an even richer texture, add a tablespoon of mascarpone or thick additive-free coconut cream. Both keep the recipe keto-friendly while boosting creaminess and mouthfeel. (And mascarpone is naturally also carnivore—which reminds me that I have an excellent homemade mascarpone recipe!)
Chocolatey Version: Add 2 teaspoons of dark cocoa powder for a deliciously creamy chocolate cheesecake twist that stays keto-friendly and indulgent. I strongly recommend adding sweetener, like stevia, powdered erythritol, allulose, or monk fruit—or Ellin keittiö caramel or vanillin stevia.
Adult-Only Rum Twist: Replace 1 tablespoon of heavy cream with 1 tablespoon of rum for a boozy kick that turns this slush into a refreshing adult dessert. Perfect for warm evenings when you want to chill with literally a little extra spirit. Oh, and if you use my pineapple stevia to sweeten this concoction, you can get into a piña colada mood!
Cheers to the wonderful summer!
