Allulose or powdered erythritol are the best options for this recipe. Allulose keeps the dough soft and smooth while erythritol makes it slightly firmer with more bite. You can also use stevia or monk fruit, but they don’t provide the same bulk and texture.
Egg Yolk
A single yolk adds richness and helps bind the dough. If you’re unsure about the safety of your eggs, you can use a pasteurized yolk. Here in Finland, raw eggs are safe to use, so I never pasteurize them. So, know your eggs!
Vanilla Whey Protein Isolate
Whey protein isolate is almost pure protein with minimal carbs and lactose. It blends smoothly and gives the dough a perfect consistency. Regular whey protein can add carbs and a grainy or too sticky texture that doesn’t work here.
Pumpkin Pie Spice
