However, you can use any keto crust for the pie. Also the sugar-free apricot jam you can replace with any sugar-free jam — or just leave it out and increase the sweetener.
Filling:
400 g quark
3 organic eggs
1 dl Good Good apricot jam
2 tbsp (or to taste) erythritol-stevia sweetener
1/2 tsp vanilla extract or vanilla powder
1. Preheat the oven to 150°C (300°F).
2. Prepare the crust: Place all the crust ingredients in a mixing bowl. Knead into a firm dough.
3. Press the dough into the bottom and up the sides of a pie dish with a diameter of about 9 inches (23cm). Note: No need to pre-bake the crust.
4. Prepare the filling: Whisk all the filling ingredients together in a bowl until well combined. Pour over the crust in the pie dish and smooth the surface.
5. Bake for about 50-60 minutes, or until the filling is set but slightly jiggly.
6. Let cool and serve.
