About my new Finnish book “Kevyempi Keto”
I have been writing a Finnish book series for people who want to follow a keto diet but without anything animal-based — a keto-vegan diet, that is. Well, some years ago, I wrote the whole manuscript, but the publisher thought the book is too massive and suggested dividing it into three parts.
The first part was published about a year ago, and the second part is now finally available in the stores this week. I really like the cover! It looks so fresh and tempting.
While the first part was an introduction to the keto-vegan diet, this second part contains more in-depth information about macro- and micronutrients and, for example, lists the best plant-based sources for each of those.
Please notice that I’m not particularly promoting the keto-vegan diet, I see it rather as an intermediate step for someone who is vegan and wants to try out a keto diet but is not (yet!) willing to include anything animal-based to her diet.
Of course, some people want to follow the keto-vegan lifestyle for longer periods, but it’s extremely challenging because of many reasons. The nutrients in plants are not very absorbable, and the antinutrients in plants make these nutrients even less absorbable.
However, I consider it my task to help people who want to follow the keto-vegan diet to get the most out of it and not fall into the traps and lose their health rather than improve it. There are so many things that can go wrong in any vegan lifestyle (I know that because I was a high-carb, low-fat vegan myself and lost my health), so I help people know the pitfalls and how to avoid them.

How to make these Divine Chocolate and Hazelnut Treats
Even though these treats contain coconut in coconut manna and coconut oil, I don’t find the taste particularly coconutty. These ingredients are just providing texture rather than taste. Cocoa and hazelnuts are the main flavor providers in these super-scrumptious keto candies.
Let’s take a look at how to prepare these easy keto treats:
First, make a water bath by filling a small, shallow bowl with boiling water.
Place a mug into the shallow bowl.
Add 1/4 cup (60 ml) coconut manna…
…and 1 tablespoon extra-virgin coconut oil.
…until completely melted.
Add 2 tablespoons roasted hazelnuts…
…1 tablespoon raw cocoa powder…
…and vanilla stevia to taste, about 10-20 drops.
…until well combined.
For an instant indulgence, eat straight from the mug. For a crunchier and more melt-in-your-mouth experience, take silicone chocolate molds or 6 silicone mini muffin cups and spoon the mixture into them.
Let set in the fridge for a couple of hours until solid.
Ready. Looks and tastes divine!

Here’s the recipe for you to enjoy:
- 1/4 cup = 60 ml coconut manna
- 1 tablespoon extra-virgin coconut oil
- 2 tablespoons roasted hazelnuts
- 1 tablespoon raw cocoa powder
- 10-20 drops (or totaste) vanilla-stevia
- Melt the coconut manna and the coconut oil in a water bath (check the photos in the post of how to make a water bath).
- Add the rest of the ingredients, i.e., the hazelnuts, cocoa powder, and the vanilla stevia.
- Mix until well combined.
- Eat immediately as an instant indulgence, or spoon into silicone chocolate molds, confection molds, or silicone mini muffin cups and let set in the fridge for a couple of hours until solid.
- Store the treats in the fridge for up to one week.

Tips for variation
I prefer vanilla stevia for sweetening, but you can use another keto-friendly natural sweetener like powdered erythritol or monk fruit and add vanilla powder or natural vanilla extract.
If you want an even more decadent and sinful taste, add a tiny pinch of natural salt, like unrefined sea salt or Himalayan salt, with the coconut manna and coconut oil so that the salt also melts nicely. On the other hand, if you prefer tiny salt bits in your chocolate, add the salt at the end after adding stevia.
This week has been extremely busy. I’m back from the summer cottage and have been occupied by Ketokamu meetings, Ketokamu product development, but mostly preparing my son’s 10th birthday party. I love to organize parties — much more than to attend parties!
Every year, I have thrown a birthday party for my son and his friends. I make and bake keto treats that are much healthier options for the sugary and wheaty treats that are usually offered at kids’ birthday parties.
From candies to cake, I love to prepare everything myself. Actually, my son makes wishes about the food he wants to be offered at his party, and I make the offerings according to his wishes—also this year. Well, to be honest, not all treats were keto: I made some popcorn as well. I find it okay if my son eats popcorn once a year — anyway, it’s homemade, organic, made with real organic butter, and seasoned with natural salt. Plus, as a lightweight food, the carb load won’t be sky-high anyway.
